Grilled Fat Pieces of Squid

Grilled Fat Pieces of Squid
This is a great summer fish salad full of brilliant Thai flavors. It's hard to believe so much flavor can come out of a dressing so simple — chile paste, honey, fresh lime juice — tossed with grilled squid and a bit of mint. Dynamite. If you're using wooden skewers, soak them in water for 20 minutes before using them so they don't catch fire on the grill.

A Summertime Delight: Grilled Squid with Zesty Thai Dressing

As a busy working mom, finding time to cook delicious and healthy meals can sometimes feel like a Herculean task. Weeknights are a whirlwind of homework, extracurricular activities, and the ever-present need to keep everyone fed. But even amidst the chaos, I crave flavorful and satisfying meals that don't require hours in the kitchen. That's why this grilled squid recipe has become a staple in my repertoire. It's quick, easy, and bursts with the fresh, vibrant flavors of summer.

The beauty of this dish lies in its simplicity. The zesty Thai-inspired dressing comes together in minutes, a whirlwind of lime juice, honey, ginger, and a touch of soy sauce. It’s a symphony of sweet, tangy, and subtly spicy notes that perfectly complements the tender, smoky flavor of the grilled squid. The preparation itself is equally straightforward. Grilling the squid takes mere minutes, leaving me ample time to attend to other tasks while dinner cooks. I often multitask while the squid cooks, prepping sides or helping with homework, making it an efficient and stress-free addition to a busy week.

The result? A dish that's both elegant and satisfying, suitable for a casual weeknight dinner or a more impressive weekend gathering. The succulent grilled squid, kissed by the smoky char of the grill, is a delight in itself. But it's the bright and refreshing Thai dressing that truly elevates this dish to another level. The combination of textures—tender squid and crunchy vegetables—offers a delightful contrast, while the vibrant colors add a touch of visual appeal to the plate. The dish is light yet filling, providing a healthy and delicious alternative to heavier, more time-consuming meals.

Beyond the Recipe: Embrace the Simplicity

What I love most about this recipe is its adaptability. You can easily adjust the ingredients to your liking. Feel free to experiment with different vegetables, adding bell peppers, zucchini, or even some cherry tomatoes for a more substantial meal. If you're not a fan of squid, you can easily substitute it with other firm white fish like cod or halibut. The dressing would also work wonderfully with shrimp or scallops.

In today’s fast-paced world, finding time for oneself, let alone for elaborate cooking, is a challenge. This recipe offers a perfect balance between deliciousness and practicality. It empowers me to create a healthy and memorable meal without compromising my time or energy. It’s a testament to the fact that exceptional food doesn’t always require hours of painstaking preparation. Sometimes, the simplest ingredients and techniques yield the most satisfying and flavorful results. So, embrace the simplicity, and enjoy the delightful taste of summer with this fantastic grilled squid recipe.

Serving Suggestions

I typically serve this dish with a side of steamed rice or quinoa for a complete and balanced meal. A simple green salad also complements the dish beautifully, adding a refreshing contrast to the richer flavors of the squid. For a more adventurous culinary experience, try serving the grilled squid with a side of stir-fried vegetables or a light noodle salad.

Remember, cooking should be enjoyable, not a chore. This simple yet flavorful grilled squid recipe is a testament to the fact that delicious, healthy meals can be prepared quickly and effortlessly, even amidst a busy schedule. So, give it a try, and let the vibrant flavors of summer transport you to a place of culinary bliss.

Step-by-step

    • Put the first seven ingredients in a small bowl and stir to combine. Set aside.
    • Place a large grill pan on two burners over medium-high heat or preheat an outdoor gas or charcoal grill and get it very hot. Take a few paper towels and fold them several times to make a square. Blot a small amount of oil on the paper towels and then carefully and quickly wipe the hot grates of the grill (or the ridges of the grill pan) to create a nonstick surface.
    • Rinse the squid under cool water and pat dry. Split the tubes from top to bottom, then cut in half diagonally so that you get 2 triangles from each squid. Score the flesh lightly in a diamond pattern. Thread a skewer through the length of each to keep the squid flat on the grill. Toss with olive oil and sprinkle with salt and pepper. Lay the calamari on the grill and cook for 2 minutes on each side.
    • Serve the squid with the chili sauce, along with remaining lime juice and mint leaves.
