My Beloved Mother's Classic Spanish Paella

The aroma of saffron, the sizzle of seafood, the comforting warmth of a perfectly cooked rice dish – these are the memories that flood back whenever I think of my mother’s paella. It wasn’t just a meal; it was an experience, a vibrant tapestry woven with the threads of family, laughter, and the sun-drenched landscapes of Spain. She wasn't a chef, just a loving mother who poured her heart into every dish, and her paella was legendary among our family and friends. The recipe, passed down through generations, has become a cherished heirloom, a testament to the simple joys of home-cooked food and the power of shared meals.

I remember countless Sunday afternoons spent in her kitchen, perched on a stool, mesmerized by her deft movements as she expertly navigated the paella pan. The rhythmic stirring, the careful addition of ingredients, the watchful eye ensuring every grain of rice reached perfection – it was a performance as much as a cooking process. Each ingredient played its part, contributing to the symphony of flavors and textures that characterized her unique paella. The succulent chicken, the plump mussels, the vibrant calamari, the sweetness of the peas, all harmonizing beautifully with the fragrant saffron and the delicate hint of olive oil. It was a masterpiece created with love, a dish that transcended mere sustenance and became a symbol of our family’s bond.

For me, making my mother's paella isn't just about recreating a recipe; it's about connecting with her memory. It's about reliving those precious Sunday afternoons, the laughter, the stories, the feeling of being utterly loved and nurtured. Each step, from preparing the ingredients to the final flourish of parsley, is a journey back in time, a heartfelt tribute to the woman who taught me the true meaning of home cooking. The paella itself is a celebration of flavors, textures, and most importantly, love. It's a taste of home, a reminder of simpler times, and a legacy I am proud to carry on.

The beauty of this recipe lies in its simplicity. It's not a complex dish requiring rare or exotic ingredients. It's about quality ingredients, carefully chosen and prepared with care. The fresh seafood, the vibrant vegetables, the fragrant saffron – each element contributes to the overall brilliance of the dish. And the secret ingredient? It's the love, the passion, the heart that's poured into its creation. This is not just a meal; it's an experience, a story told through every bite.

More than just a dish, my mother's paella embodies the spirit of Spanish cuisine: a vibrant mix of fresh, flavorful ingredients coming together in perfect harmony. It’s a celebration of simple pleasures, a reminder of the importance of gathering around a table and sharing a meal with loved ones. The paella pan becomes a stage, and the process of cooking, a shared experience, a connection across generations.

Step-by-step

    • Heat oil in a large sized non-stick pan or well seasoned skillet (or a paella pan if you have one), over medium heat.
    • Fry onion, garlic and capsicum together; cook until onion is transparent (about 3 minutes).
    • Add in the chicken and fry until chicken is golden on all sides.
    • Add in the chopped tomatoes and salt and pepper to taste. Cook the tomatoes for 5 minutes until they release liquid and the tomatoes begin to create a sauce.
    • Add the mussels (if using), and calamari rings, allow to cook for a further 5 minutes.
    • Pour in the stock (or broth), the rice, peas and saffron. Mix all ingredients until well combined.
    • Bring to a boil; reduce the heat and cover to allow MOST of the liquid to absorb into the rice, while stirring occasionally to prevent rice from sticking and burning to the pan underneath. (Cook until the rice is ALMOST cooked through.)
    • Add in the prawns, mixing them through the rice, and cover again to allow the prawns and rice to cook completely.
    • Once cooked, sprinkle with the parsley.
    • Place capsicum strips over the top of the paella for enhanced flavour to serve.
    • Drizzle with a small amount of olive oil over the top before serving.
    • Serve!
