Patty Melts with Charred Onions
This is one of my favorite burgers. The charred onions develop a deep sweetness that perfectly counterbalances the earthy, slightly sour character of the rye bread and the nutty flavor of the Swiss cheese. This is a first-class knife-and-fork burger that you will want to eat again and again.

My Go-To Comfort Food: Patty Melts with Charred Onions

There’s nothing quite like the satisfying crunch of perfectly toasted rye bread, the savory richness of melted Swiss cheese, and the sweet bite of charred onions all nestled between two juicy patties. This isn't just any burger; it's a Patty Melt, and for me, it's the ultimate comfort food. It's a recipe I’ve perfected over years of experimenting, tweaking, and, of course, enthusiastically devouring the results.

The beauty of this Patty Melt lies in the balance of flavors. The slight tang of the rye bread provides a fantastic counterpoint to the rich, meaty patties. The Swiss cheese, with its nutty notes and creamy texture, adds another layer of complexity. But the real star of the show? Those charred onions. Grilling the onions until they're deeply caramelized brings out an incredible sweetness, a natural sweetness that elevates the entire dish. It's a flavor transformation that's hard to resist.

I remember the first time I made a Patty Melt. It was a spontaneous decision, a late-night craving that led me to rummage through my fridge. I didn't have all the fancy ingredients, but I had the essentials: good quality ground beef, some rye bread, Swiss cheese, and a couple of onions. The result was transformative. It was a revelation, a culinary epiphany, the kind of sandwich that deserves a place in everyone's culinary repertoire.

Over the years, this recipe has become a staple in my home. It's the perfect meal for a casual weeknight dinner, a satisfying lunch, or even a sophisticated gathering of friends. It’s remarkably versatile; you can easily customize it to your liking. Experiment with different types of cheese, add bacon for extra richness, or include other grilled vegetables for a fresh twist.

The preparation itself is surprisingly straightforward. The most crucial step is the grilling of the onions and the patties. It's here that the magic happens; the caramelization of the onions and the perfect char on the patties are essential to achieving that unique Patty Melt flavor profile. Don't be afraid to experiment with the grilling time to find your perfect level of doneness.

Step-by-step

    • Prepare a charcoal or gas grill for direct grilling over high heat. Brush and oil the grill grate.
    • In a large bowl, using a spoon, not your hands, gently mix together the chuck and sirloin. Run your hands under cold water and divide the mixture into 6 equal portions. Shape each portion into a patty about the size and shape of a slice of bread, being careful not to compact the meat too much. Season on both sides with salt and pepper. Make a depression in the center of each patty with your thumb. Refrigerate the patties until the grill is ready.
    • Brush both sides of each bread slice with the butter.
    • Place the patties, indent side up, and onion slices on the grill directly over the fire. Cook, turning once, until both the patties and the onions are nicely charred on both sides and the burgers are cooked to your liking, 4-5 minutes per side for medium. During the last 2 minutes of cooking, top each patty with a slice of cheese and put the bread slices along the edge of the grill, then cover the grill. Grill, turning the bread slices once, until the cheese is melted and the bread is lightly toasted.
    • Place each burger on a slice of toasted rye. Toss the onion slices to break up the rings, and divide evenly among the burgers. Top each burger with a second slice of toasted bread and serve at once.
