Kays Cheesy Potatoes: A Christmas Tradition (and Weeknight Winner!)

My Go-To Comfort Food: Kays Cheesy Potatoes

As a busy mom of three, finding time to cook a delicious and satisfying meal can sometimes feel like a Herculean task. But there are certain dishes that, despite their simplicity, bring so much joy and warmth to our family table. One of those dishes, without a doubt, is Kays Cheesy Potatoes. This creamy, cheesy twist on scalloped potatoes has become a staple in our home, particularly during the Christmas season, but honestly, it’s good enough to make any time of year. The secret? It's not just about the cheesy goodness; it’s about the comforting ritual of making it, the shared smiles while we eat it, and the wonderful memories it creates.

The first time I made Kays Cheesy Potatoes was a few years ago, when I was desperately searching for a holiday side dish that would wow my family without requiring hours of preparation. My grandmother always made scalloped potatoes, but I wanted to put my own spin on it, something a bit more indulgent. And that's when I discovered the magic of Velveeta. I know, I know, some might scoff at the use of processed cheese, but trust me on this one. The smooth, creamy texture it lends to the sauce is simply divine. Paired with the perfectly cooked potatoes, it creates a harmony of flavors that is impossible to resist. And the best part? It's surprisingly easy to make, even on a busy weeknight.

More than just a recipe, it's a feeling. The aroma of melted butter and cheese fills the kitchen as it bakes, creating a cozy and inviting atmosphere. The simple act of layering the potatoes and cheese sauce is meditative, a chance to slow down and focus on the task at hand, a welcome break in the midst of the everyday chaos. It's a tradition I now cherish, a way to connect with my family and celebrate even the smallest of moments. My kids always ask for it, and my husband often comments that this side dish is even better than the main course!

The beauty of this recipe is in its adaptability. Sometimes I add a sprinkle of crumbled crackers to the top for extra crunch, other times I leave it plain. I’ve experimented with different types of cheese, occasionally mixing in some sharp cheddar for a more robust flavor. But the core ingredients – the potatoes, the Velveeta, the butter, the milk – always remain the same, forming the heart of this comforting classic. These potatoes aren't just a dish; they're a symbol of warmth, love, and togetherness, transforming a simple meal into a cherished memory.

So, whether you're a seasoned chef or a kitchen novice, I encourage you to give Kays Cheesy Potatoes a try. It's a recipe that will not only satisfy your taste buds but also warm your heart. It's a dish that embodies the spirit of home-cooked goodness, proving that sometimes the simplest pleasures are the most satisfying. It's the kind of dish that makes you feel good, inside and out – and that’s a feeling worth savoring.

This year, why not add a touch of cheesy goodness to your holiday table or brighten up your weeknight dinner? These potatoes are easy to make, perfect for any gathering, and are sure to become a family favorite. Believe me, you'll want to make this again and again. The creamy, cheesy, comforting goodness is addictive – in the best possible way! Happy cooking!

Step-by-step

    • Peel and slice potatoes - I like them a little thicker so they don't fall apart when you cook them.
    • Add a couple of tbsp of salt to enough water to cover the potatoes in a non-stick stock pot; bring water to a boil; simmer gently until they are fork tender
    • While the potatoes are cooking, make the cheese sauce as follows
    • Melt butter in a large non-stick sauce pan over medium heat
    • Remove pan from heat and stir in flour
    • Return pan to heat and gradually stir in the milk - (stirring constantly while pouring milk a little at a time keeps the sauce from getting lumpy)
    • Cook gently on medium to low medium (stirring often) until the sauce begins to thicken
    • Add cheese
    • Preheat oven to 375 degrees and grease a large casserole dish
    • Place a layer of potatoes in the bottom of the dish and salt lightly
    • Pour some cheese sauce over the potatoes, just enough to cover them
    • Repeat steps 10 & 11 until you run out of potatoes, end with cheese sauce
    • You can crumble crackers over the top if you wish but it's not necessary
    • Bake in oven about 30 minutes or until bubbly and cheese turns light brown - keep an eye on it
