A Weeknight Winner: Baked Halibut

As a busy working mom, finding time to cook a delicious and healthy dinner can feel like a Herculean task. Between school pick-ups, after-school activities, and the never-ending to-do list, the last thing I want to do is spend hours slaving away in the kitchen. That's why I rely on recipes that are quick, easy, and, most importantly, impressive. This baked halibut recipe fits the bill perfectly. I discovered it a few years ago, and it's become a weeknight staple in our home.

What I love about this recipe is its versatility. It's incredibly adaptable to whatever you have on hand. Feel free to experiment with different herbs and spices – a sprinkle of lemon zest or some chopped chives would be delightful additions. If you can't find fresh dill, dried dill will work in a pinch, although fresh always has a brighter flavor. And if halibut isn’t your favorite fish, this recipe works beautifully with other firm white fish like cod or snapper. The creamy, buttery topping elevates any type of fish, making it a truly special meal without the fuss.

The preparation is unbelievably simple. The most time-consuming part is prepping the ingredients. Once you've got everything chopped and measured, the rest is a breeze. It's a truly satisfying feeling to put a perfectly baked, flavorful fish on the table in under 30 minutes. My family always cleans their plates, and that's the best reward a busy mom can ask for. The ease of cleanup is another significant bonus. Baking the fish in foil makes cleanup a snap—just toss the foil when you're done! This recipe is perfect for those nights when you want a restaurant-quality meal without the restaurant-quality time commitment.

Beyond its ease and deliciousness, this baked halibut recipe is also packed with nutrients. Halibut is an excellent source of protein and omega-3 fatty acids, essential for overall health and well-being. The addition of fresh dill provides a boost of vitamins and antioxidants. It's a win-win – a healthy and satisfying meal that’s ready in a flash. For a complete meal, I often serve this with a simple side salad and some roasted vegetables. The flavors complement each other perfectly, creating a balanced and nutritious dinner that the entire family can enjoy.

This baked halibut recipe isn't just a meal; it's a time saver, a stress reliever, and a delicious way to nourish my family. It’s a testament to the idea that delicious, healthy food doesn’t have to be complicated or time-consuming. It’s a recipe I cherish, not only for its wonderful taste but also for the ease and joy it brings to my weeknights. So, if you're looking for a quick, easy, and incredibly tasty dinner recipe, give this baked halibut a try. You won’t be disappointed!

Step-by-step

    • Line an 8x12 baking pan with foil. Do not spray with PAM. You can use other types of fish if you want.
    • Preheat oven to 450*
    • Put cream cheese and milk into a small saucepan. Cut up half of fresh dill into this mixture. Heat on low until all is combined.
    • Place halibut in pan, skin side down. Salt and pepper to taste. Use a spatula and cover fish with cream cheese mixture. You will have some left.
    • Melt butter and stir into breadcrumbs. Spread this over the cream cheese mixture on top of halibut and sprinkle the remainder of the dill on top.
    • Bake about 15 minutes if you have quarter-inch thick pieces. Bake about 20 minutes if it's a whole piece of fish and isn't cut into serving pieces.
    • The remainder of the cream cheese mixture can be served on the side.
