Almond Joy Protein Balls: A Busy Woman's Sweet Treat

Almond Joy Protein Balls: My Go-To Energy Boost

As a working mom, finding time for anything beyond work and family feels like a Herculean task. Snacks are often an afterthought, grabbed quickly between meetings or rushed school drop-offs. But neglecting proper nutrition leaves me feeling sluggish and drained, impacting my energy levels and overall mood. That's why I've developed a love for quick, healthy, and delicious snacks that keep me going throughout the day. Enter: these Almond Joy Protein Balls.

These little bites of heaven are incredibly versatile. I initially created them as a way to satisfy my sweet tooth without the guilt of consuming sugary treats. They're surprisingly easy to whip up, even on the busiest of days. The recipe uses simple ingredients, mostly staples I already have in my pantry, meaning minimal trips to the grocery store. More importantly, they provide a sustained energy release, unlike sugary snacks that lead to an energy crash. I can feel the difference, and that’s what truly matters. They are packed with protein, healthy fats from the almonds and coconut oil, and a touch of natural sweetness from honey or maple syrup. They’re perfect for a pre-workout snack, a mid-afternoon pick-me-up, or even a satisfying dessert after a long day.

The best part? My kids love them too! They’re a healthier alternative to the store-bought candy they usually beg for. It’s a win-win: a delicious, nutritious treat that the whole family can enjoy. I often make a large batch on the weekend and store them in the fridge for easy access throughout the week. They're also great for packing in lunchboxes, ensuring my kids stay energized for school.

The process of making these protein balls is incredibly therapeutic for me. The rhythmic blending and rolling of the dough is a calming ritual in the midst of the chaos. It allows for a few moments of mindfulness, a small act of self-care in an often demanding day. I find that this simple act of creating something nourishing for myself and my family brings a sense of peace and accomplishment. And let's face it, there’s something inherently satisfying about making your own treats and knowing exactly what's in them.

Beyond the immediate benefits of a tasty and energizing snack, these Almond Joy Protein Balls represent something more. They symbolize a commitment to self-care and a healthy lifestyle amidst the whirlwind of daily life. They're a reminder that even amidst the chaos, I can prioritize my well-being with simple, yet effective, actions. It’s not just about the recipe; it’s about the mindful process and the resulting feeling of accomplishment and self-care.

I encourage you to try this recipe. It's more than just a snack; it's an opportunity to prioritize your own well-being. Adjust the sweetness and ingredients to your liking—experiment with different types of nuts, seeds, or dried fruits. The possibilities are endless! This recipe is a blank canvas for your own culinary creativity.

Ingredients I use (feel free to substitute!):

  • Almonds: I prefer whole almonds for their texture and nutritional value.
  • Protein Powder: I love Sunwarrior, but any plant-based protein powder will work.
  • Cacao Powder: This adds richness and a hint of chocolatey goodness.
  • Stevia Extract: I prefer stevia for its natural sweetness and low glycemic index.
  • Coconut Oil: Melted coconut oil helps bind the ingredients and adds a delicious flavour.
  • Honey or Maple Syrup: A touch of natural sweetness to balance out the other flavours.
  • Coconut Milk: Light coconut milk adds moisture and creaminess.
  • Vanilla Extract: Enhances the overall flavour profile.
  • Coconut Flakes: For coating and adding texture.

These protein balls are a testament to the power of simple ingredients and mindful creation. They’re more than just a recipe; they’re a reflection of my commitment to balanced living, to finding moments of calm amidst the everyday hustle, and to nourishing myself and my family with delicious and wholesome treats.

Step-by-step

    • In a food processor, add almonds, protein powder, cacao powder, stevia extract, salt and process until fine powder forms.
    • In a small bowl, stir together coconut oil, honey, coconut milk, vanilla and add to a food processor.
    • Process until smooth dough forms, stopping and scraping the walls of a food processor. It took me about 3-5 minutes and my food processor needed a few breaks.
    • Then add 1/2 cup of coconut flakes and process until combined, 1-2 minutes.
    • Place some coconut flakes on a plate, scoop golf size amount of dough, roll with your hands into a ball and coat in the flakes.
    • Alternatively, you could use a bag with a small amount of coconut flakes in it and shake to coat the protein ball.
    • Repeat until you run out of dough.
