My Favorite Easy Homemade Cookies

As a busy mom of three, finding time to bake is a luxury, not a given. My kids, however, have a sweet tooth that rivals a honey badger's hunger for honey! So, I've perfected a simple cookie recipe that's quick to make, incredibly delicious, and adaptable to whatever my little ones (and I!) are craving that day. These cookies are a lifesaver on those hectic afternoons when everyone needs a little pick-me-up – and trust me, these cookies do the trick.

The beauty of this recipe lies in its simplicity. No complicated techniques or obscure ingredients are needed. Just a few pantry staples, a little elbow grease (or a quick whiz with an electric mixer), and some creative topping options are all you need to whip up a batch of these delightful treats. I often let the kids help with the rolling and decorating, turning the baking process into a fun family activity. It's a great way to teach them about measuring and following instructions, while also creating lasting memories in the kitchen.

What I love most about this recipe is its versatility. One day, we might go classic with simple sprinkles. The next day, we might get a little adventurous with mini chocolate chips, chopped nuts, or even dried fruit. The possibilities are truly endless! I’ve even experimented with adding a touch of cocoa powder to the dough for a chocolatey twist. The kids particularly enjoyed making snowman cookies during the winter months, using white frosting and candy eyes to decorate.

These cookies are perfect for after-school snacks, birthday parties, or simply a cozy night in. They're soft, chewy, and utterly irresistible. They also store well in an airtight container, so you can enjoy them for several days. And let's be honest, that's a huge win for any busy parent!

The process couldn't be easier. The dough comes together quickly, and the baking time is short, making it ideal for those moments when you need a sweet treat in a hurry. The best part? You can customize them however you please! Let your imagination run wild! I often use different types of extract to add a unique flavor dimension - almond extract is another one of my favorites.

The recipe itself uses basic ingredients you probably already have in your pantry. This simplicity is a key reason why this has become a staple in our home. No need for specialized baking supplies or a trip to the specialty store. It’s all about keeping things uncomplicated and delicious.

Beyond being a convenient recipe, it’s a way to connect with my family. The shared joy of baking and decorating these cookies together is just as important as the end result. It's a small moment of togetherness in a busy world. This makes the effort so much more rewarding than simply grabbing a box of store-bought cookies. The smiles on their faces while they decorate their own creations make it all worthwhile.

So, if you're looking for a simple, delicious, and adaptable cookie recipe, look no further. Give this recipe a try, and I promise you won't be disappointed. Your family (and your taste buds) will thank you!

Step-by-step

    • Preheat oven to 350 degrees F (180 degrees C).
    • Combine butter or margarine, baking soda, white sugar and your favorite extract flavor. Beat these ingredients together with an electric mixer until fluffy.
    • Add self-rising flour. Beat well.
    • Roll dough into walnut sized balls.
    • Place them two inches apart onto the cookie sheet and flatten slightly.
    • Press ice cream stick into the flattened side of the cookie, and press down. This way, you know how large the cookie will be when baked.
    • Add whatever topping to each cookie you like, OR, before pressing stick into the cookie, roll each cookie into sprinkles first, then flatten.
    • Bake until edges are lightly golden.
