Home-Style Rice Balls: A Quick and Satisfying Dinner

As a busy mom, I'm always looking for quick and easy meals that the whole family will enjoy. These home-style rice balls are a perfect example. They're surprisingly filling, flavorful, and require minimal cleanup—a huge bonus on a busy weeknight! My dad, a true connoisseur of comfort food, adored these, and that's why I affectionately call them "Dad's Rice Balls." They’re perfect for a weeknight dinner, but also impressive enough to serve to guests.

The beauty of this recipe lies in its simplicity. It's a delicious combination of tender rice, savory ground beef, and melted cheese, all rolled into perfectly sized balls and baked to crispy perfection. The tomato-based sauce adds a lovely tang, complementing the richness of the meat and cheese. I often serve them with a side of garlic bread for dipping—a perfect match! They're versatile, too. You can easily adjust the seasonings to your taste, adding herbs or spices for an extra layer of flavor. Sometimes I add a pinch of oregano or basil for an Italian twist.

Making these rice balls is a fun process. The entire family can get involved, especially the little ones who enjoy shaping the balls. It's a great way to spend time together while preparing a delicious meal. The aroma filling the kitchen during baking is truly irresistible. The crispy exterior gives way to a warm, cheesy center, a delightful combination of textures and tastes. They're not just a quick dinner solution; they’re a family bonding experience, creating lasting memories around the table.

I’ve found these rice balls are a great way to use up leftover rice. It's a fantastic way to reduce food waste and create something delicious in the process. Sometimes, if I have some leftover cooked vegetables, I’ll finely chop them and add them to the rice mixture for extra nutrients and flavor. The possibilities are endless! It’s a testament to how simple ingredients can come together to make something truly special.

Beyond weeknight dinners, these rice balls are perfect for potlucks, picnics, or even as a fun appetizer. Their portability makes them ideal for gatherings, and they’re always a crowd-pleaser. They hold up well, both at room temperature and when reheated, making them a convenient choice for any occasion. The crispy exterior and the cheesy, savory interior are a winning combination that never fails to impress.

So, if you're looking for a simple, satisfying, and delicious meal that the whole family will love, give Dad's Rice Balls a try. They’re a recipe that’s easy to master, always a success, and a sure way to create a happy mealtime experience.

Step-by-step

    • Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
    • Heat olive oil in a skillet over medium heat, and cook and stir the garlic until fragrant and soft, about 3 minutes. Stir in the ground beef. Cook and stir the meat, breaking it into crumbles as it cooks, until browned and the meat is no longer pink inside, about 10 minutes. Drain off excess grease.
    • Place hot cooked rice, ground beef, salt and pepper, and 1/2 cup of pasta sauce in a bowl, and mix thoroughly together. Mix in the Parmesan and mozzarella cheese until mozzarella cheese melts.
    • Scoop up handfuls of rice mixture, and gently form into 2 1/2-inch balls. Place balls on a baking sheet, and refrigerate until cool and firm, about 20 minutes.
    • Preheat oven to 350 degrees F (175 degrees C).
    • Remove the rice balls from the refrigerator, and roll each in beaten egg and then bread crumbs to thoroughly coat. Return to baking sheet, and bake until the outside of the rice balls is crispy, about 25 minutes.
    • Heat 1 1/2 cups of pasta sauce in a saucepan over medium heat, and cover rice balls with heated sauce to serve.
