My Dad's Famous Rice Balls: A Quick and Easy Family Dinner

As a busy mom, I'm always on the lookout for quick and easy dinners that the whole family will love. These rice balls, affectionately named after my dad (because he absolutely adores them!), have become a staple in our house. They're incredibly versatile, satisfying, and perfect for a weeknight meal. The best part? They're surprisingly simple to make, even if you're short on time.

The recipe itself is a testament to the beauty of simple ingredients combined in a delicious way. The savory ground beef, perfectly cooked rice, and melted mozzarella cheese create a flavor explosion in every bite. I like to make them softball-sized, ensuring they’re substantial enough to serve as a main course. A side of your favorite pasta sauce and some crusty garlic bread complete the meal, making it a truly comforting and satisfying experience.

What I love most about this recipe is its adaptability. Feel free to experiment with different cheeses – provolone or even a blend of Italian cheeses would be delicious. You can also add other vegetables to the rice mixture, such as finely chopped onions, peppers, or mushrooms, to add extra flavor and texture. For a spicier kick, add a pinch of red pepper flakes to the meat mixture. The possibilities are endless!

The process of making these rice balls is a fun and engaging activity, especially if you have kids. They can help with shaping the balls, rolling them in breadcrumbs, or even setting the table. It’s a great opportunity to spend quality time together while creating a delicious meal. The act of rolling the rice balls in the beaten egg and breadcrumbs is almost therapeutic, and the satisfying crunch of the browned exterior is a reward in itself.

These rice balls aren't just a quick weeknight dinner; they're a comforting, flavorful meal that brings the family together. Their simplicity belies their incredible taste, making them a recipe I’ll be making again and again. Try it out, and I’m confident it will become a family favorite in your house too. The satisfaction of creating something so delicious and loved by everyone is truly rewarding. And let's be honest, who doesn't love a good, hearty, and easy meal that takes minimal effort and maximum flavor?

So, whether you’re a seasoned cook or a kitchen novice, these rice balls are an excellent addition to your recipe repertoire. Give them a try, and I promise you won't be disappointed. The joy of sharing this simple, yet flavorful dish with loved ones is priceless. Enjoy!

Step-by-step

    • Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
    • Heat olive oil in a skillet over medium heat, and cook and stir the garlic until fragrant and soft, about 3 minutes. Stir in the ground beef. Cook and stir the meat, breaking it into crumbles as it cooks, until browned and the meat is no longer pink inside, about 10 minutes. Drain off excess grease.
    • Place hot cooked rice, ground beef, salt and pepper, and 1/2 cup of pasta sauce in a bowl, and mix thoroughly together. Mix in the Parmesan and mozzarella cheese until mozzarella cheese melts.
    • Scoop up handfuls of rice mixture, and gently form into 2 1/2-inch balls. Place balls on a baking sheet, and refrigerate until cool and firm, about 20 minutes.
    • Preheat oven to 350 degrees F (175 degrees C).
    • Remove the rice balls from the refrigerator, and roll each in beaten egg and then bread crumbs to thoroughly coat. Return to baking sheet, and bake until the outside of the rice balls is crispy, about 25 minutes.
    • Heat 1 1/2 cups of pasta sauce in a saucepan over medium heat, and cover rice balls with heated sauce to serve.
