Pear Crisps with Dried Sour Cherries
This is a terrific fall dessert. Soft, syrupy pears and tart sour cherries are nestled under a nutty, spiced topping, which is baked until crunchy and golden brown. At the restaurant, the topping crumbs that fall from the crisps onto the baking tray are one of my favorite snacks, and my staff and I cant resist nibbling on them whenever the crisps come out of the oven. Be sure to bake the crisps until the juices bubble up thickly; otherwise, not enough of the moisture will evaporate and the fruit will be soggy.

This year, I’ve been experimenting with different recipes, and my latest obsession? Pear crisps with dried sour cherries. This recipe is pure autumn magic, a perfect blend of sweet and tart flavors that will warm you from the inside out. The pears, so soft and juicy, are perfectly complemented by the tangy sour cherries. And then there's the crunchy, spiced topping – a symphony of nutty goodness that adds the perfect textural contrast.

I’ve always enjoyed baking, ever since I was a little girl helping my grandmother in the kitchen. The smell of warm spices and freshly baked goods fills me with a sense of comfort and nostalgia. This pear crisp recipe has become a staple in my household. It's surprisingly easy to make, yet the result is so impressive. It’s the kind of dessert that makes your guests feel like they’re being treated to something truly special. But what makes it even more special is that it’s perfect for sharing. There’s something inherently comforting about sharing a warm dessert with loved ones, especially during the fall season.

The Secret to the Perfect Crisp:

One of the things I've learned over the years is that the key to a truly excellent crisp lies in the balance of flavors and textures. The pears should be soft and tender, the cherries adding a delightful tartness that cuts through the sweetness. And the crumble topping? Oh, the crumble topping! It should be perfectly crunchy, with just the right amount of spice. This recipe delivers on all counts. The combination of cinnamon and nutmeg works perfectly with the pears and cherries, creating a warm and inviting aroma that fills the entire kitchen while it bakes.

Beyond the Recipe: A Fall Tradition

This pear crisp isn't just a dessert; it's an experience. The process of making it – from prepping the ingredients to the delightful aroma filling your home – is almost as enjoyable as eating the finished product. It's the kind of recipe that allows you to slow down, appreciate the process, and create something beautiful. It has become a cherished tradition in my home, a symbol of warmth, comfort, and the joy of sharing a homemade treat with those I love.

It's a recipe that embraces the bounty of the season, using fresh, seasonal ingredients to create something truly special. The flavors, the aromas, the textures – everything about it evokes the feeling of autumn. It's the perfect ending to a cozy evening, a delightful treat to share with friends and family, or simply a quiet moment of self-care, savoring the simple pleasures of life.

Step-by-step

    • In a small saucepan, combine the cherries with enough water or wine (or a combination) to cover them by 2 inches. Bring the mixture to a simmer over medium heat, then turn off the heat and let cool. Let the cherries soak overnight in the refrigerator, or for at least 8 hours, until they are plump and soft. Drain the cherries, reserving the juices.
    • In a large bowl, combine the pears, drained cherries, and 1/4 cup of the granulated sugar and toss well. Mix in 1/2 of the cherry soaking liquid, or whatever cherry soaking liquid is left plus enough water to make 1/2 cup. Let the mixture stand for 30 minutes.
    • Meanwhile, preheat oven to 375°F. In a large bowl, whisk together the remaining 1/4 cup of granulated sugar, the flour, almonds, brown sugar, cinnamon, and nutmeg. Slowly drizzle in the butter and stir with a fork until the mixture is crumbly and all the flour is incorporated. Do not allow the mixture to come together in a ball. Break up any large crumbs with your fingers. The crumbs should be smaller than 1 inch in size (otherwise they won't cook all the way through).
    • Spoon the fruit into eight 8-ounce ramekins and place them on a baking sheet. Evenly sprinkle the crumbs on top of the fruit. Bake the crisps until the filling is bubbling and the topping is browned, about 40 minutes. Serve hot or warm.
