Citrus-Glazed Turkey with Chipotle Gravy: A Culinary Adventure

Thanksgiving is just around the corner, and I'm already thinking about the delicious aromas and flavors that will fill my home. This year, I'm breaking away from tradition and presenting a twist on a classic holiday dish: a Citrus-Glazed Turkey with Chipotle Gravy. The recipe is an amazing blend of sweet and spicy notes, a perfect balance that appeals to all palates.

The preparation may seem intricate, but trust me, it's totally manageable. I always make this for family gatherings, and it's always a huge hit. The key is to take your time and follow the steps carefully. The beautiful golden-brown turkey, glistening with its citrus glaze, is a sight to behold and the amazing chipotle gravy just makes the whole thing extraordinary!

The beauty of this recipe lies in its versatility. You can adapt it to your preference. If you're not a fan of spice, you can easily reduce the amount of chipotle peppers or omit them altogether. The citrus glaze provides a refreshing counterpoint to the savory turkey, creating a harmonious blend of flavors that will tantalize your taste buds. The chipotle gravy adds a delightful smoky warmth, perfectly complementing the citrus glaze and tender turkey meat.

I love the way the citrus glaze adds a beautiful shine to the turkey skin and keeps it incredibly moist. The recipe also includes helpful tips on how to carve the turkey, which is always a plus. For my family, this is about so much more than just food; it's about creating memories and sharing special moments around the table.

This recipe isn't just for Thanksgiving; it's perfect for any special occasion. Imagine serving this stunning dish at your next holiday gathering, family dinner, or even a casual get-together with friends. The reaction is always the same; wide eyes, excited murmurs, and plenty of happy sighs as everyone digs in! The recipe is impressive enough for company but also easy enough to make for a weeknight dinner (just adjust the portion sizes).

So this year, let's break free from the ordinary and embrace the extraordinary. This Citrus-Glazed Turkey with Chipotle Gravy will become your new Thanksgiving staple, guaranteed to impress your guests and leave them wanting more. I’ve made this so many times, it's truly a family favorite, and it will soon become one of yours, too!

Tips and Tricks for Turkey Perfection:

  • Brining: For an extra juicy and flavorful turkey, consider brining it overnight before cooking.
  • Stuffing: If you choose to stuff your turkey, make sure to do so loosely to allow for proper cooking.
  • Meat Thermometer: A meat thermometer is essential for ensuring the turkey is cooked to a safe internal temperature of 165°F (74°C).
  • Resting Time: Allow the turkey to rest for at least 30 minutes after cooking to allow the juices to redistribute, resulting in a more tender and flavorful bird.
  • Gravy: The gravy is the star here – don’t rush the thickening process. Low and slow is the key to a smooth, luscious gravy.

I encourage you to try this recipe and share your experience with me! Let's celebrate the season with a feast that is both delicious and memorable. Happy cooking!

Step-by-step

    • Preparation For glaze: Melt butter in heavy small saucepan over medium heat. Remove from heat. Stir in next 7 ingredients. Freeze until mixture begins to firm up but is still spreadable, about 30 minutes. Set aside 1/2 cup citrus glaze for gravy.
    • For turkey: Melt butter in large nonstick skillet over medium-high heat. Add onions and reserved turkey parts and sauté until onions are very deep brown, about 22 minutes. Add carrots, celery, and tomatoes to skillet and toss to blend. (Glaze and vegetable mixture can be made 1 day ahead. Cover separately and chill. Cover turkey and chill.)
    • Set rack in bottom third of oven and preheat to 400°F. Place small rack in center of large roasting pan. Sprinkle vegetable mixture with turkey parts around rack. Rinse turkey inside and out; pat dry. Place turkey on rack in roasting pan. Starting at neck end, carefully slide hand between skin and breast meat to loosen skin. Rub 1/2 cup citrus glaze over breast meat under skin. If stuffing turkey, spoon stuffing loosely into neck and main cavities. Tuck wing tips under turkey; tie legs together loosely to hold shape. Brush 1/3 cup glaze over top and sides of turkey (not bottom); reserve any remaining glaze. Sprinkle turkey generously with salt and pepper. Cover turkey (not pan) loosely with foil. Roast 30 minutes. Reduce oven temperature to 350°F; add 1 cup broth to pan. Press foil snugly around turkey (not pan). Roast 1 hour 15 minutes. Add 1 cup broth to pan. Roast turkey until thermometer inserted into thickest part of thigh registers 175°F, adding 1 cup broth every 30 minutes, lifting foil to baste with pan juices and removing foil during last 15 minutes to brown turkey, about 3 hours 30 minutes longer if unstuffed or 4 hours 15 minutes if stuffed. Transfer turkey to platter. Tent with foil; let stand 30 minutes (internal temperature of turkey will increase by 5 to 10 degrees). Reserve pan juices.
    • For gravy: Strain pan juices into 8-cup measuring cup, pressing on solids to extract some pulp and as much liquid as possible; discard solids in strainer. Spoon fat from top of juices; discard fat. Add enough chicken broth to pan juices in cup to measure 6 cups.
    • Stir reserved 1/2 cup citrus glaze in heavy large saucepan over medium heat until melted. Gradually add flour; whisk 1 minute. Gradually whisk in pan juices. Bring to boil, whisking until smooth. Reduce heat to medium; boil until sauce thickens slightly, about 5 minutes. Season gravy with salt and pepper. Brush any remaining glaze over turkey. Serve turkey with gravy.
