Step-by-step

    • After you have cut up all the chicken, place in a large bowl and add all the ingredients except the oil. You may add as little or as much as you would like.
    • After everything has been added, place foil over the bowl and set in the fridge to set about 30 minutes to an hour, or even overnight.
    • While the chicken is in the fridge, it's time to make the batter. You will need 2 1/4 cups flour, salt, pepper, 1 1/2 tsp baking powder, 2 tsp oil, 2 tsp cornstarch, an egg, and 2 cups of water.
    • Take the chicken out and pour the batter over the chicken until well coated.
    • Heat oil, and while the oil is heating up, we can start on the sauce, which takes a minute or two.
    • In a medium bowl, add minced garlic (as much or as little as you like). Add about 3 or 4 tsp of lemon juice, lots of honey, whisk in ketchup, and salt and pepper to taste. Add a shake or two of garlic powder, onion powder, and 3 or 4 (or even more if you like) tsp of hot sauce, but taste just to be sure.
    • When the oil is ready, take a fork and drop the chicken in, being careful not to overcrowd. Place on paper towels and salt.
    • When all the chicken is done, you may either pour sauce over the chicken or serve on the side so people may dip.
