Asparagus and Blue Cheese Salad with Mandarin Oranges
This recipe was inspired by one I found on a blue cheese container. The olive oil was too strong so I reworked the recipe a bit. It is a very refreshing cold salad.

A Refreshing Twist on a Classic Salad: My Asparagus and Blue Cheese Adventure

As a busy professional woman, juggling meetings, deadlines, and social events, finding time for healthy and delicious meals can feel like a Herculean task. I often find myself grabbing something quick and convenient, which doesn't always align with my goals of eating well. However, this simple asparagus and blue cheese salad has become a lifesaver, a perfect blend of satisfying flavors and effortless preparation. It's the kind of recipe that’s both impressive enough to serve to guests yet simple enough for a weeknight meal.

The inspiration for this salad came from the most unexpected place – a blue cheese container! I stumbled upon a recipe suggestion on the packaging, a simple salad that hinted at deliciousness. But, the original recipe’s olive oil was a little overpowering for my taste, so I took it upon myself to refine the recipe, experimenting with the balance of flavors until I achieved the perfect harmony. The result? A bright, zesty, and surprisingly simple salad that’s become a staple in my meal rotation. The slight tang of the blue cheese, perfectly balanced by the sweetness of the mandarin oranges and the crispness of the asparagus, is an absolute delight. The recipe is incredibly versatile; feel free to adjust the amounts of lemon and mandarin juice to create a dressing that suits your palate perfectly.

This salad is far more than just a quick lunch; it's a little escape, a moment of quiet amidst the whirlwind of daily life. The process of preparing it is meditative, a small act of self-care amidst the chaos. From the satisfying snap of the asparagus spears as I trim them, to the pleasant aroma of fresh herbs wafting through the air, it’s a sensory experience that allows me to reconnect with the simple pleasure of cooking and eating well. The vibrant colors of the ingredients alone uplift my mood. It's a delicious reminder that healthy eating doesn’t have to be complicated or time-consuming; sometimes the most satisfying meals are the simplest ones.

The best part is its versatility. This salad is equally delightful as a light lunch, a side dish to accompany grilled chicken or fish, or even a sophisticated appetizer for a casual gathering. Its refreshing nature makes it ideal for warmer months, but it also works wonderfully as a lighter option during colder months. The combination of textures is another aspect I absolutely adore: the crisp asparagus, the creamy blue cheese, the juicy mandarin oranges, and the slightly sharp red onion creating a symphony of flavors and textures in every bite.

Beyond the culinary aspects, this salad has taught me a valuable lesson about adapting recipes to suit personal preferences. Don't be afraid to experiment, to adjust seasonings, and to make a recipe your own. Cooking should be a creative and enjoyable experience, and this salad is a perfect example of how a simple adjustment can transform a good recipe into a truly exceptional one. So, the next time you're looking for a quick, healthy, and flavorful meal, give this asparagus and blue cheese salad a try. You might just find your new favorite recipe, one that's both satisfying and surprisingly simple to make.

I encourage you to experiment with different variations. Perhaps try adding some toasted walnuts or pecans for added crunch, or substitute another citrus fruit for the mandarin oranges. The possibilities are endless! The beauty of this recipe is its adaptability to your own personal taste. Let your culinary imagination run wild; it’s your kitchen, and the possibilities are unlimited!

Ultimately, this salad is more than just a collection of ingredients; it's a reminder to slow down, savor the flavors, and appreciate the simple pleasures in life. It is a culinary embodiment of balance and freshness, a reflection of the mindful approach I strive to incorporate into every aspect of my life. It is not just a salad; it’s a small act of self-care that nourishes both body and soul.

Step-by-step

    • To trim the asparagus spears, hold in both hands and bend. The ends will break off leaving only the tender spears.
    • Bring a pot of salted water to a boil.
    • While waiting, prepare an ice bath by filling a bowl or pot with ice and water, leaving enough room for the cooked spears.
    • When the water comes to a boil, drop in the spears until just tender, about 1.5 minutes. They should be bright green.
    • Drain and plunge into the ice bath for another minute.
    • Drain well.
    • Meanwhile, whisk together the olive oil and about 2 tbsp mandarin juice and 1 tbsp lemon juice with fresh ground pepper. Time to taste! Add more mandarin and lemon juice if needed. (When I made this I used about 3 tbsp mandarin juice and 1.5 tbsp of lemon juice).
    • When dry, cut the asparagus spears into three pieces and toss with the oranges, red onions, and blue cheese.
    • Drizzle the dressing over the tossed salad and sprinkle with kosher salt and fresh ground pepper.
    • Enjoy!
