Step-by-step

    • Scald milk and potato water.
    • Add butter, salt and sugar.
    • Let stand until lukewarm.
    • Sprinkle warm water over yeast.
    • Let stand to make sponge.
    • Put 4 cups flour in large bowl.
    • Add milk mixture, eggs, mashed potatoes, raisins and yeast.
    • Beat until smooth.
    • Add remaining flour. Knead 10 minutes or until smooth and elastic.
    • Place in greased bowl; turn greased side up.
    • Cover. Let rise until double (about 1 1/2-2 hrs.).
    • Punch dough down. Divide in half. Shape into 2 loaves. Place each into a greased baking pan. Cover. Let rise until almost doubled - about 45 minutes.
    • Bake in a 350 degree oven until golden brown and loaf sounds hollow when tapped.
    • Cool on wire rack, laying loaf on its side.
    • Just before removing from pans, brush tops with melted butter.
    • Makes 2 (9 by 5") loaves or 10 mini loaves.
