This is a rich and flavourful soup that kids and adults enjoy. I freeze it in small portions and re-heat for the kids to take to school as a hot lunch. It's made without dairy, if you omit the addition of Parmesan cheese at the end. Family favorite!

My Favorite Tomato Bisque: A Family Recipe

As a busy mom, finding time to cook delicious and nutritious meals can be a challenge. But one thing I always prioritize is making sure my family eats well. This tomato bisque recipe is a lifesaver! It's so flavorful and satisfying, both my kids and my husband gobble it up. The best part? It's incredibly versatile. I often make a big batch on the weekend, freeze it in individual portions, and then it's ready for a quick and healthy lunch for the kids to take to school. No more packing sandwiches every day!

What I love about this recipe is its simplicity. It uses readily available ingredients, and the process is straightforward, even on a busy weeknight. The secret to its rich and deep flavor lies in the slow cooking process. Taking the time to properly sauté the vegetables allows the flavors to meld together beautifully, creating a depth of taste that you won't find in a rushed recipe. The bacon adds a smoky, salty note that perfectly complements the sweetness of the tomatoes. The addition of Parmesan rind (optional, but highly recommended!) elevates the soup to another level, lending a savory complexity that’s simply divine.

Beyond its ease and deliciousness, this soup is also incredibly healthy. Packed with vitamins and antioxidants from the tomatoes and other vegetables, it's a hearty and nutritious meal that provides sustained energy throughout the day. And because it's dairy-free (unless you add the Parmesan rind), it caters to various dietary needs. I find that the flexibility of this recipe is one of its greatest assets.

The versatility of this tomato bisque extends beyond just lunchboxes. It's a perfect starter for a dinner party, a comforting meal on a chilly evening, or even a satisfying lunch for a busy workday. I often serve it with crusty bread for dipping, enhancing the overall dining experience. The creamy texture, the rich flavor, and the overall satisfaction it provides make it a true family favorite.

One of the key things I've learned over the years is the importance of using quality ingredients. While this recipe is simple, using fresh, high-quality ingredients makes all the difference in the final product. I particularly love using San Marzano tomatoes for their sweetness and depth of flavor. They truly elevate the taste of the soup. And the fresh herbs? Don't skimp on those! They add so much aromatic complexity to the dish.

I encourage you to give this recipe a try. It's a recipe that I've perfected over time, and it has become a staple in my household. The ease of preparation, the delicious taste, the nutritional value, and the ability to freeze portions make it an ideal choice for busy families. It's more than just a soup; it's a warm hug in a bowl, a testament to the power of simple, wholesome ingredients combined with a little bit of love.

So, whether you're a busy mom like me, a seasoned cook, or simply someone looking for a comforting and delicious meal, this tomato bisque recipe is a winner. Enjoy!

Step-by-step

    • Heat a large Dutch oven over medium heat and cook the pieces of bacon until all the fat is rendered and the bacon is crisp.
    • Remove from the pot with a slotted spoon to a paper towel-lined bowl and set aside. There should be about 4 tbsp of bacon fat left in the pot.
    • Use this to saute the vegetables (yum!), OR drain it and use a lighter oil (canola or olive).
    • Add the onions, celery, carrots and garlic to the pot (salt and pepper if desired) and saute until very soft but do not let brown. Stir often!!
    • This can take a while depending on the size of your pot, but be patient... the flavour of the soup depends on this step.
    • Add the pureed and canned tomatoes, parsley, thyme and bay leaf. Simmer for about 20 minutes, uncovered.
    • Meanwhile, melt the butter and stir in the flour to make a paste.
    • Stir the paste into the simmering soup and continue stirring until it starts to thicken.
    • Add the chicken stock and stir.
    • Allow the soup to simmer for at least 15 minutes, covered with a lid.
    • Remove the bay leaf and use an immersion blender to puree the soup to a very smooth consistency.
    • If using, add the Parmesan cheese rind to the soup and turn the heat down very low.
    • After about 10-15 minutes the rind should be soft and may even have some cheese melting off. This adds a nice flavour to the soup.
    • Remove the rind and discard.
    • Adjust the seasoning if necessary.
    • Ladle into bowls and serve with the bacon crumbles.
    • Croutons are great with it too!
    • This can also be frozen (cool completely first).
