Boursin and Bacon on Rustic Bread
I'm not too sure how this came about but we have been making it since the early 1980s, our nephew Dan might remember as he was always saying "Go on Aunty Maureen, just one more Please." He really loved Boursin cheese and his mother (My Sister Jayne) wasn't all that happy as we were introducing him to expensive foods that were hard to obtain in Rishton, Lancashire back then. However, whatever year it was it makes a superb lunch or supper dish, served with a tomato salad, and a chilled Chardonnay.

A Simple Pleasure: Boursin and Bacon on Rustic Bread

This isn't just a recipe; it's a memory. A taste of simpler times, of family gatherings, and of a nephew's infectious enthusiasm for a rather decadent cheese. This Boursin and Bacon sandwich, a seemingly simple creation, holds a special place in my heart, and I'm delighted to share it with you. The story behind it adds to its charm, transporting me back to the 1980s in Rishton, Lancashire, where acquiring this particular cheese was quite the feat. My sister Jayne might not have been thrilled about the expense, but the joy on my nephew Dan's face made it all worthwhile. "Go on Aunty Maureen, just one more, please!" – that's a request I’ll never forget. It's the kind of memory that's woven into the very fabric of this recipe, making each bite a nostalgic journey.

The sandwich itself is surprisingly elegant in its simplicity. The creamy, tangy Boursin cheese provides a luxurious base, perfectly complemented by the salty, smoky crunch of bacon. The rustic bread, something hearty and substantial like pan de campagne, adds a lovely textural contrast. This isn't your average lunchtime sandwich; it's a culinary experience, perfect for a relaxed lunch or a light supper. I often serve it alongside a simple tomato salad, its fresh acidity cutting through the richness of the cheese and bacon. A chilled Chardonnay is the perfect pairing, its crispness enhancing the flavors without overpowering them. The preparation is wonderfully straightforward; it’s the sort of recipe that even a busy working mum can manage, and the results are truly rewarding.

Beyond the delicious taste and ease of preparation, what truly makes this recipe special is the love and laughter embedded within it. It's a testament to the power of simple pleasures and shared moments. It’s a reminder that sometimes the most memorable meals are not the elaborate, multi-course affairs, but the comforting, familiar ones that bring people together. It’s a dish that embodies warmth, nostalgia, and the unadulterated joy of sharing a delicious meal with loved ones. The years may pass, but the memory of Dan's delighted face and the exquisite taste of this sandwich remain as vibrant as ever. It’s a recipe I happily revisit, not just for its exceptional flavor, but also for the flood of happy memories it evokes.

So, I encourage you to try this recipe. Make it for yourself, for a friend, or for a loved one. Let the simple act of creating and sharing this sandwich transport you, even if just for a moment, to a place of warmth, laughter, and delicious memories. And remember, always allow for that "just one more, please!" because sometimes, the best things in life are the simple ones, made even more special by the people we share them with.
