We found that a small amount of Pernod in the rickeys added an interesting but unimposing accent. If you dont care for the flavor of Pernod, simply substitute an equal amount of additional vodka. Can be prepared in 45 minutes or less but requires additional unattended time.

My Unexpected Summer Drink Discovery: The Raspberry Lime Rickey

Summer. The word itself conjures images of sunshine, laughter, and refreshing drinks. This summer, however, my quest for the perfect summer beverage led me down a surprisingly delightful path – to the Raspberry Lime Rickey. Now, I'm not usually one for elaborate cocktails; my go-to is usually iced tea or lemonade. But something about the combination of tart lime, sweet raspberries, and a hint of something unexpected (a little Pernod, in this case!) completely captivated me.

The story behind this discovery is rather simple. I was searching for a unique drink to serve at a small gathering. I stumbled upon a recipe for a Raspberry Lime Rickey, and the description intrigued me. The recipe promised a refreshing drink that was surprisingly easy to make, perfect for a hot summer's day. The addition of Pernod was intriguing; I'd never considered using it in a cocktail before. Initially hesitant, I decided to give it a try, and I'm so glad I did.

The process itself is incredibly straightforward. The initial prep work involves juicing raspberries – a surprisingly easy task, even for a kitchen novice like myself. Once the raspberry juice is extracted, the rest is a simple matter of mixing all the ingredients in a pitcher and letting it chill. I found that making the drink ahead of time was a lifesaver, allowing me to relax and enjoy my guests without last-minute drink preparation stress.

The flavor profile is simply divine. The tartness of the lime perfectly balances the sweetness of the raspberries. The subtle anise notes from the Pernod (or the extra vodka if you prefer) add a sophisticated twist, elevating the drink from simple refreshment to something truly special. The bubbly club soda adds a light effervescence that's both invigorating and refreshing.

What truly sets this Raspberry Lime Rickey apart is its versatility. It’s easily customizable. The amount of sugar can be adjusted to suit your preference, making it sweeter or tarter depending on your liking. I've even experimented with adding a sprig of mint for an extra layer of freshness, and the result was simply amazing. This drink can be an ideal companion to a summer afternoon picnic or a relaxed evening on the patio.

More than just a drink, the Raspberry Lime Rickey became a symbol of summer for me. It’s a testament to the simple pleasures in life – the joy of spending time with loved ones, the satisfaction of creating something delicious, and the refreshing coolness of a perfectly crafted cocktail on a scorching summer day. It’s a drink that truly embodies the spirit of summer, and I highly recommend you give it a try.

This summer, make the Raspberry Lime Rickey your go-to drink. It's easy, delicious, and it's sure to impress your friends and family. Give it a whirl, and let me know what you think!

Step-by-step

    • In a sieve set over a bowl drain raspberries, pressing gently on berries with back of a spoon if necessary to yield 1/2 cup liquid, and reserve raspberries for another use.
    • In a 2-quart pitcher stir together raspberry liquid, lime juice, water, vodka, Pernod, and sugar until sugar is dissolved and chill until cold.
    • Rickeys may be prepared up to this point 1 day ahead and chilled, covered.
    • Just before serving, add club soda or seltzer water, enough ice to fill pitcher, and some fresh raspberries and lime slices.
    • Serve rickeys in glasses filled with ice and garnish with more fresh raspberries and lime slices.
