Pumpkin Sweet Potato Soup
Inspired by several recipes, I tweaked this to create my own favorite for using up leftover pumpkin. This soup is not too sweet and has a different flavor than many holiday pumpkin recipes, making it good for a change of pace. The cinnamon adds a nice roundness to the flavor, but doesn't dominate.

A Cozy Autumn Recipe: Pumpkin Sweet Potato Soup

My Favorite Fall Soup: A Pumpkin Sweet Potato Delight

Autumn. The air crisps, leaves transform into fiery masterpieces, and the scent of pumpkin spice fills the air. For me, autumn also means cozy nights in, curled up with a good book and a steaming bowl of something delicious. And this year, that something delicious is my perfected Pumpkin Sweet Potato Soup. I've always loved pumpkin soup, but so many recipes were either overly sweet or lacked that certain depth of flavor I craved. After experimenting with several variations inspired by online recipes, I finally landed on a recipe that's become a staple in my kitchen, a go-to comfort food that perfectly captures the essence of fall.

What sets this soup apart? It's the perfect balance of sweet and savory. The sweetness of the pumpkin and sweet potatoes is beautifully complemented by warm spices, creating a flavor profile that's both comforting and sophisticated. Unlike many holiday-themed pumpkin soups, this recipe isn't cloyingly sweet; it's a subtle sweetness that allows the other flavors to shine. The addition of garam masala brings an intriguing complexity, adding warmth and depth that elevates the soup beyond the ordinary. The creamy texture, achieved by blending the soup until perfectly smooth and sieving for extra finesse, is the final touch that makes this soup truly exceptional. It's a soup that’s as visually appealing as it is delicious – a vibrant orange hue that brightens up even the dreariest autumn evening.

This recipe is incredibly versatile. It's perfect for a weeknight dinner, a casual weekend gathering, or even a Thanksgiving side dish (yes, it’s that good!). The beauty of it is its simplicity – it requires minimal prep time and uses readily available ingredients. You can easily adapt it to your liking by adding or subtracting spices, or by experimenting with different types of milk or cream for an even richer texture. I often add a dollop of plain yogurt and a sprinkle of fresh parsley for an extra layer of flavor and visual appeal, but feel free to get creative and add your favorite garnishes.

More than just a recipe, this soup represents the cozy warmth and comforting flavors of autumn. It’s the perfect way to celebrate the season and create lasting memories. Whether you're a seasoned cook or a kitchen novice, this recipe is a must-try. So gather your ingredients, put on some relaxing music, and get ready to experience the magic of this delicious and incredibly easy-to-make Pumpkin Sweet Potato Soup.

Beyond the simple joy of cooking and eating, this soup symbolizes something more to me. It represents the satisfaction of transforming simple ingredients into something extraordinary, a reflection of my own journey of self-discovery and growth. It's a testament to the power of creativity and the ability to find beauty in everyday moments. It’s a small act of self-care, a reminder to slow down, appreciate the simple things, and savor the flavors of life, one spoonful at a time.

Step-by-step

    • In a skillet, sauté onion until tender. Add garlic and sauté briefly, 30 seconds. Deglaze the pan with some of the stock and transfer to the stoneware of a slow cooker.
    • Add the pumpkin puree (or pumpkin cubes), cubed sweet potatoes, spices and remaining stock to the slow cooker. Cook on low heat for 8 hours until sweet potatoes are tender.
    • Remove the cinnamon stick. Using an immersion blender or working in batches with a normal blender, puree the soup. Add the coconut milk and continue to process until very smooth. If you prefer very smooth soups, process the pureed mixture through a fine mesh sieve. This is more important if using fresh pumpkin.
    • Serve garnished with plain yogurt and some parsley. Enjoy!
