Veal Cutlets with Mushrooms and Tomatoes
My best cooking is done on Sundays during the fall and winter, when I become a football widow. The game doesnt appeal to me at all, so I happily escape to the kitchen while my husband, Angelo, roots for the Giants. Often I prepare a feast that includes meatballs and sauce, chicken cutlets, roasted peppers, hot bread, and creme brulee. An afternoon of cooking can be very therapeutic after a busy week. And since Angelo is actually a bigger fan of my food than of football, Im always shown plenty of appreciation.

Veal Cutlets with Mushrooms and Tomatoes: A Sunday Escape

Sundays in the fall and winter are my favorite time to cook. It's my escape, my quiet time. While my husband, Angelo, is glued to the football game, I find solace and joy in the kitchen. The aroma of simmering sauces and sizzling meats fills our home, creating a warm and inviting atmosphere that’s far more appealing than any game day drama.

This veal cutlet recipe is a staple in our Sunday feasts. It's a simple yet elegant dish that never fails to impress. The tender veal, sautéed to perfection, is complemented by the earthy mushrooms and juicy tomatoes. The rich, savory sauce ties everything together beautifully. It’s the kind of comforting meal that warms you from the inside out, perfect for a chilly autumn or winter afternoon.

Angelo, bless his heart, is a better judge of my culinary creations than a football game. He appreciates the effort, the love, and of course, the delicious results. The joy on his face when I present him with this dish, after a week of long hours and busy schedules, is reward enough. It’s a simple gesture, but it speaks volumes about the connection we share—a connection forged over shared meals and heartwarming moments.

The preparation of this dish is therapeutic in itself. The rhythmic chopping of vegetables, the careful sautéing of the veal, the simmering sauce—each step is a meditation. It’s a chance to clear my head, to focus on something other than the daily grind. And the best part? The result is a delicious meal that we can enjoy together, a reminder that even amidst the chaos of life, there is always time for simple pleasures.

Each step, from preparing the ingredients to plating the final dish, brings a sense of accomplishment and satisfaction. The act of nourishing my loved ones through food is something that truly brings me joy. It's a feeling I can't quite express with words, but it's a deep sense of fulfillment and contentment that goes beyond just the act of cooking itself.

The ingredients are simple, readily available, and easily incorporated into a well-rounded, balanced meal. This isn't just a dish; it's a testament to the power of simple, wholesome ingredients, transformed through careful preparation into something truly special. Step-by-step

    • Heat 2 tablespoons oil in heavy large saucepan over medium-high heat. Add garlic and rosemary; stir 30 seconds. Add mushrooms. Cover pan and cook 5 minutes, stirring occasionally.
    • Uncover and sauté until mushrooms are golden brown, about 5 minutes longer. Add tomatoes and cook until softened, about 5 minutes. Set aside.
    • Sprinkle veal with salt and pepper. Dust with flour.
    • Heat 1 tablespoon oil in heavy large skillet over medium-high heat. Add half of veal. Sauté until brown and cooked through, about 2 minutes per side. Transfer veal to platter; tent with foil to keep warm.
    • Repeat with remaining 1 tablespoon oil and veal.
    • Add broth and wine to same skillet. Boil until reduced by half, scraping up browned bits, about 4 minutes. Add mushroom mixture and stir to blend.
    • Season sauce to taste with salt and pepper; spoon over veal and serve.
