Penne with Tomatoes, Olives, and Two Cheeses: A Weeknight Delight

As a busy working mom, finding time to cook a delicious and satisfying meal can feel like a Herculean task. But I've discovered that even on the most hectic evenings, a little planning and the right recipe can transform a simple weeknight dinner into a culinary adventure. This Penne with Tomatoes, Olives, and Two Cheeses recipe is my go-to when I need something hearty, flavorful, and relatively quick to prepare. It's the perfect blend of comfort food and sophisticated taste, satisfying even the pickiest eaters in my family.

The beauty of this dish lies in its simplicity. The ingredients are readily available at any grocery store, and the preparation is straightforward enough for even a novice cook to master. The rich tomato sauce, infused with aromatic basil and a hint of spicy red pepper, coats the perfectly cooked penne, creating a symphony of textures and flavors. The creamy Havarti and sharp Parmesan cheeses add a delightful contrast, melting beautifully into the sauce and providing a luxurious richness that elevates the dish to a whole new level. And let's not forget the briny olives, which add a salty, Mediterranean touch that perfectly complements the overall flavor profile.

More Than Just Pasta: A Culinary Journey

This dish is more than just a satisfying meal; it’s a small escape, a moment to savor the simple things in life. The aroma of simmering tomatoes and herbs fills the kitchen, creating a warm and inviting atmosphere. The process of gently stirring the sauce, watching it thicken and deepen in color, is meditative and strangely satisfying. It’s a reminder to slow down, appreciate the process, and enjoy the fruits of my labor.

A Flexible Recipe for Every Occasion

What I love most about this recipe is its flexibility. It’s easily adaptable to different tastes and dietary needs. For a vegetarian option, simply omit the chicken broth and use vegetable broth instead. Feel free to experiment with different types of cheese – provolone or mozzarella would be equally delicious. You can also add other vegetables, such as bell peppers or zucchini, to increase the nutritional value and add more color to the dish.

This Penne with Tomatoes, Olives, and Two Cheeses recipe isn't just a meal; it's a story. A story of busy days and comforting evenings, of delicious flavors and simple pleasures. It's a reminder that even amidst the chaos of everyday life, there's always time for a little culinary magic, a moment to savor, and a taste of something truly special.

Serving Suggestions:

I often serve this pasta dish with a simple tossed salad and a crusty loaf of bread. A glass of chilled white wine perfectly complements the richness of the sauce and the flavors of the cheese. For a more elegant presentation, garnish the finished dish with fresh basil leaves before serving.

Step-by-step

    • Heat 3 tablespoons oil in heavy large Dutch oven over medium-high heat. Add onion and garlic; sauté until onion is translucent, about 5 minutes.
    • Mix in tomatoes, dried basil and crushed red pepper. Bring to boil, breaking up tomatoes with back of spoon.
    • Add broth; bring to boil. Reduce heat to medium; simmer and mixture thickens to chunky sauce and is reduced to 6 cups, stirring occasionally, about 1 hour 10 minutes. Season with salt and pepper. (Can be made 2 days ahead. Cover and chill. Rewarm over low heat before continuing.)
    • Preheat oven to 375°F. Cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain well.
    • Return pasta to same pot. Toss with 3 tablespoons oil.
    • Pour sauce over and toss to blend. Mix in Havarti cheese.
    • Transfer pasta to 13x9x2-inch glass baking dish. Sprinkle with olives, then Parmesan.
    • Bake until pasta is heated through, about 30 minutes. Sprinkle with basil.
