As a busy working mom, finding time to cook a delicious and satisfying meal can often feel like a Herculean task. Weeknights are a blur of school pickups, homework help, and the constant juggle of work and family responsibilities. But even amidst the chaos, I believe a home-cooked meal is essential for connecting with my family and nourishing our bodies. This Fettuccine with Country Ham and Vegetables recipe has become a recent favorite, perfectly balancing flavor and ease of preparation.

The creamy, rich sauce is a comforting hug on a cold night, while the vibrant vegetables add a touch of freshness and brightness. The country ham provides a salty, savory depth that elevates the dish beyond simple pasta. It's a recipe I can confidently whip up after a long day, knowing it will be met with enthusiastic approval from everyone at the table. The secret is in the preparation; having the ingredients prepped ahead of time makes the cooking process quick and less stressful. I often chop the vegetables and grate the parmesan the night before, saving precious time when I’m already rushing to get dinner on the table. It's amazing how such small steps can make a big difference!

This dish also offers flexibility. Feel free to substitute vegetables based on what's fresh and in season. Asparagus and carrots are my go-to, but broccoli, zucchini, or peas would also work wonderfully. The beauty of this recipe lies in its simplicity and adaptability. It allows you to infuse your own personal touch and preferences while still delivering an exceptionally satisfying meal. Step-by-step

    • Bring large pot of salted water to boil. Add carrot and cook until crisp-tender, about 4 minutes. Using slotted spoon, transfer carrot to strainer and cool.
    • Add asparagus to boiling water and cook until just tender, about 3 minutes. Using slotted spoon, remove asparagus pieces, reserving tips for garnish.
    • Add pasta to boiling water and cook until just tender but still firm to bite, stirring occasionally. Drain pasta. Return to same pot.
    • Meanwhile, heat oil in heavy large skillet over medium-high heat. Add leeks and bell pepper; sauté 2 minutes.
    • Add cream and simmer until slightly thickened, about 5 minutes.
    • Mix in 1/2 cup grated Parmesan cheese and country ham.
    • Add carrot and asparagus pieces to sauce. Season to taste with salt and pepper.
    • Pour sauce over pasta and toss to coat evenly.
    • Divide pasta among 4 plates. Garnish with asparagus tips.
    • Serve, passing additional Parmesan separately.
