Meet the Cook: Traditional meat pies aren't among my husband's favorites. He likes these so much, however, that he even eats them cold! I've found they're a great lunch for a haying crew as well. Brian and I have a son, 11 months. -Wendy Tomlinson, Echo Bay, Ontario

Ground Beef Turnovers: A Family Favorite

My Ground Beef Turnovers: A Recipe for Busy Moms (and Everyone Else!)

As a busy mom, I'm always looking for recipes that are both delicious and easy to make. These ground beef turnovers fit the bill perfectly. They're hearty, flavorful, and surprisingly simple to assemble. My husband, bless his heart, even enjoys them cold – a testament to their deliciousness! He often grabs a few for lunch when he's working outside, and they’re also a big hit with the hay crew that sometimes helps out on our farm.

The best part? These turnovers are incredibly versatile. You can easily adapt the filling to your liking. Want to add some mushrooms or spinach? Go for it! Feeling adventurous? Try different cheeses or herbs. The possibilities are endless. This recipe has become a staple in our home, and I'm excited to share it with you. It's the kind of recipe that's perfect for a busy weeknight dinner, or a special occasion. The rich, savory filling encased in a flaky, golden crust is a guaranteed crowd-pleaser.

Beyond the practical: This recipe is more than just a meal; it’s a connection. The act of rolling out the dough, filling each turnover, and watching them bake brings a sense of calm amidst the daily chaos. It’s a ritual that unites us as a family, a shared experience in creating something delicious and comforting together. My 11-month-old son, Brian, loves watching me work in the kitchen, and the warm, inviting aroma of baking pastries always seems to bring a smile to his face.

Making these turnovers has become a ritual in our family. Sometimes, my husband helps with assembling the turnovers, creating a fun, shared activity before dinner. Other times, it’s my quiet time – a moment to unwind and focus on the process of creating something delicious. This recipe is more than just a collection of ingredients; it’s a reflection of family life – simple, fulfilling, and bursting with love. The simple pleasure of biting into a warm, savory turnover is the perfect ending to a long day.

Whether you're a seasoned baker or a complete novice, these ground beef turnovers are a must-try. The recipe is forgiving, and even if your turnovers aren’t perfectly shaped, they’ll still taste amazing. The key is to have fun and enjoy the process. So, gather your ingredients, put on some music, and get ready to create a delicious and satisfying meal that your family will adore.

A Tip for Busy Cooks: You can prepare the pastry dough ahead of time and store it in the refrigerator for up to two days. This makes assembling the turnovers even quicker and more convenient on a busy weeknight.

Beyond the Kitchen: These turnovers are perfect for picnics, potlucks, or even packing for lunch. The sturdy crust holds up well, making them a portable and satisfying meal option.

Variations on a Theme: Feel free to experiment with different fillings. Some of my favorite variations include adding different cheeses, herbs, or even a touch of spice. The possibilities are endless!

I hope you enjoy this recipe as much as we do. It's a small piece of our family life, and I'm delighted to share it with you. Happy baking!

Step-by-step

    • In a large bowl, combine flour, sugar and salt; cut in shortening until mixture resembles coarse crumbs.
    • In a small bowl, combine the water, egg and vinegar. Add to shortening mixture, 1 tablespoon at a time, tossing lightly with a fork until mixture forms a ball.
    • Cover and chill for 30 minutes.
    • Meanwhile, combine the first six filling ingredients.
    • Divide pastry into 15 equal portions.
    • On a lightly floured surface, roll out one portion into a 6-1/2-in. circle.
    • Mound a heaping 1/3 cup filling on half of circle.
    • Moisten edges with water; fold dough over filling and press edges with a fork to seal.
    • Transfer to a greased baking sheet.
    • Repeat with remaining pastry and filling.
    • Cut three slits in the top of each turnover; brush with cream.
    • Bake at 375° for 35-40 minutes or until vegetables are tender and crust is golden brown.
