This is a delicious pasta/veggie dish with ham. Leave out any veggies you do not care for, but it is wonderful the way it is. This is good with any pasta, but I like a larger variety like cheese tortellini.

Tortellini Primavera with Ham: A Simple, Delicious Pasta Dish

As a busy working mom, I’m always looking for quick and easy weeknight dinner recipes that don’t sacrifice flavor. This Tortellini Primavera with Ham fits the bill perfectly. It's a delightful twist on a classic pasta dish, offering a satisfying blend of savory ham, fresh vegetables, and creamy pasta sauce. The best part? It’s incredibly adaptable to whatever ingredients I have on hand.

The inspiration for this recipe actually came from a delightful impromptu creation. I was craving the Tortellini Siciliano from my favorite restaurant, Napoli's, but didn't have the time for a restaurant run. So, I raided my pantry and refrigerator, and this deliciousness was born! It’s a testament to the fact that sometimes the most satisfying meals are the ones born from spontaneity and a little culinary improvisation.

The beauty of this recipe lies in its flexibility. While I’ve included a suggested list of vegetables – onions and bell peppers – feel free to experiment with your favorites. Broccoli florets, zucchini slices, or even spinach would all add a delicious dimension to the dish. Similarly, the type of pasta is entirely up to you. Cheese tortellini is my personal preference because I love the creamy, cheesy filling that complements the rich sauce so well, but any pasta shape would work perfectly, whether it's penne, farfalle, or even spaghetti.

The sauce is where the magic really happens. It's a creamy, savory blend of pasta sauce, black olives, ham, and cream cheese. The cream cheese adds an unexpected richness and creaminess that balances beautifully with the salty ham and the slightly sweet pasta sauce. The milk adds a subtle smoothness, ensuring the sauce isn’t too heavy. I use 2% milk for a slightly lighter version, but whole milk would also be delicious.

The preparation is straightforward and quick. First, I sauté the onions and peppers until they’re tender, allowing their sweetness to fully develop. Then, I combine the pasta sauce, black olives, and ham in the skillet and simmer until everything is heated through. Next, I stir in the softened cream cheese and gradually add the milk, ensuring that it melts completely and forms a luscious, creamy sauce.

While the sauce simmers gently, I bring a pot of water to a boil and cook the pasta according to the package directions. Once the pasta is cooked al dente, I drain it, give it a quick rinse, and then toss it with the hot sauce mixture. The final step is to serve it hot and enjoy! This dish is simple enough for a weeknight meal, yet elegant enough to serve to guests. Its versatility means it’s always a crowd-pleaser, no matter the occasion. From a quick family dinner to a casual get-together with friends, this recipe will be a surefire hit. The best part is, the cleanup is minimal, leaving more time for you to enjoy your delicious meal and the company of your loved ones.

So, ditch the takeout menus and embrace the simplicity of this wonderful Tortellini Primavera with Ham. It's the perfect balance of comfort food and effortless elegance, a dish that’s both satisfying and quick to make. It’s a recipe that I frequently return to, a reliable standby in my culinary repertoire. Give it a try, and I’m confident it will quickly become a new favorite in your kitchen too!
