Vern's Southern Style Tomato Gravy: A Comfort Food Classic

My Grandma's Secret: Vern's Southern Style Tomato Gravy

This isn't just a recipe; it's a story. It's the story of my grandmother, Vern, a woman whose love language was undeniably delicious food. Her kitchen, always bustling with activity, was the heart of our family. The aroma of her cooking – biscuits baking, gravy simmering – is a memory as vivid today as it was decades ago. And at the center of it all was her legendary tomato gravy. This isn't just any tomato gravy; this is *Vern's* Southern Style Tomato Gravy, a recipe passed down through generations, a testament to Southern comfort food at its finest.

I remember sitting at her kitchen table, watching her work her magic. The sizzle of the cast iron skillet, the rhythmic stirring of the wooden spoon – these were the sounds of my childhood. It wasn't just about the process; it was about the love she poured into every dish. She'd tell stories, her eyes twinkling, as the gravy thickened, its rich aroma filling the room. That gravy wasn't just a side dish; it was a hug in a bowl, a reminder of warmth, family, and unconditional love. Today, I share this recipe not just as a collection of ingredients and steps but as a legacy, a piece of my grandmother's heart, and a tribute to the enduring power of Southern hospitality.

The secret to Vern's Southern Style Tomato Gravy lies not just in the precise measurements (though those are important, too!) but in the attention to detail, the slow simmer, and the love poured into each spoonful. It’s about letting the flavors meld, allowing the tomatoes to deepen in richness, and achieving that perfect balance of tanginess and heartiness. It’s about creating a gravy that’s thick enough to cling to the biscuits but still retains its juicy character. It's about enjoying the comfort of something simple, yet profound, something that evokes feelings of nostalgia and togetherness.

This gravy isn't just a perfect companion for biscuits; it's equally delightful spooned over grits, served alongside fried chicken, or even used as a base for a hearty pasta sauce. Its versatility is remarkable, but for me, the ultimate experience is the classic pairing: Vern's Southern Style Tomato Gravy and Vern's Southern Style Buttermilk Biscuits (a recipe I will definitely share another time!). The combination is simply heavenly. The rich, savory gravy complements the fluffy, slightly sweet biscuits beautifully. It’s a perfect harmony of flavors and textures, an explosion of Southern charm in every bite. Making this recipe is more than just cooking; it's a journey, a walk down memory lane, a chance to honor the culinary traditions passed down to me. It's a connection to my family and to the heart of Southern cooking. I hope you enjoy this recipe as much as I do.

More than just a meal, it’s an experience, a story, a testament to the enduring power of family, tradition, and the magic of a home-cooked meal.

So gather your ingredients, fire up your cast iron skillet, and prepare to be transported to my grandmother's kitchen. Get ready to savor every drop of this unforgettable gravy. And remember, the best part? Sharing it with loved ones.

Step-by-step

    • In a large cast iron skillet, brown beef or sausage or both (if both total weight still 1/2 pound), add salt and pepper to taste and remove meat and set aside when browned.
    • Leave 8-10 tablespoons of grease left over from ground beef and heat in the same large cast iron skillet.
    • Slowly add flour covering grease. Stir to completely mix grease and flour. Brown flour completely till almost burnt. Medium brown.
    • Pour canned tomatoes with juice in a medium bowl and crush tomatoes with hand. Pour into gravy mix, stirring. Add cooked beef, stir slowly.
    • To use milk: Mix 1/2 cup of milk with 1 cup of water. To use water: Add 1 1/2 cans of water, add more or less water to thicken or thin the sauce.
    • Stirring with a wooden spoon, turn heat down to med-low. Cook slowly, while still stirring. Gravy will start to rise and thicken.
    • Stir slowly using a wooden spoon until desired texture. Add more water if desired, 1/8 cup at a time.
    • Add salt and pepper to taste.
    • Serve over Vern's Southern style Buttermilk biscuits, hand crumbled. I use at least 4 biscuits per plate.
    • Optional: Serve with Vern's Southern Pepper Relish and Avery's Tobasco Sauce.
