My Bandaleros Mess #1: A New Mexico Ranch-Hand Breakfast

The aroma of sizzling bacon and frying hash browns is a familiar one to me. It's a scent that instantly transports me back to my days working on a ranch in central New Mexico. There, amidst the wide-open spaces and the breathtaking sunsets, I discovered a breakfast that has become a cherished staple: Bandaleros Mess #1. It’s not exactly a delicate dish; it's hearty, satisfying, and perfect for fueling up before a long day of work. And honestly, after a long day of hard work, it's even better.

This isn’t your dainty breakfast-in-bed affair. Bandaleros Mess is a no-nonsense, stick-to-your-ribs meal. The beauty of it lies in its simplicity and its ability to be adapted to whatever ingredients are at hand. While I learned the original recipe on that ranch, I've since adapted it to fit my own preferences and availability of ingredients. The basic premise remains the same: a delicious collision of savory flavors that leave you feeling fully energized and completely content. I often make a big batch on Sundays, so there are plenty of leftovers for a quick breakfast all week long. Nothing beats that morning convenience!

The heart of the dish is the perfectly browned ground beef, simmered with the wonderful heat of Bueno chopped green chilies. The choice between mild or hot is entirely up to you—a personal preference that adds a delightful spice to the dish. The hash browns provide a crispy, golden base, a perfect counterpoint to the rich beef and chilies. Then come the perfectly fried eggs, their sunny-side-up yolks oozing golden goodness onto the plate. Crispy bacon adds an extra layer of salty deliciousness. And finally, warm flour tortillas provide the perfect vehicle for scooping up every last morsel of this magnificent breakfast.

The experience of eating Bandaleros Mess #1 is as much about the process as it is about the final product. There's a certain joy in watching the hash browns crisp in the pan, the satisfying sizzle of the ground beef, and the subtle crackle of the bacon. Each component brings its own unique texture and flavor, a symphony of culinary delights that dances on your taste buds. It’s a meal that evokes a sense of warmth, community, and the uncomplicated pleasures of good food and good company. And yes, it often makes a great lunch, or even a dinner meal if you're craving something hearty and satisfying!

Over the years, I've shared this recipe with countless friends and family members. It’s become a favorite at family gatherings, potlucks, and even just a casual weekend breakfast. The simplicity of the recipe makes it perfect for beginners, but the depth of flavor ensures that even seasoned cooks will appreciate it. So, whether you're a seasoned chef or a kitchen novice, I encourage you to try Bandaleros Mess #1. It's a breakfast that’s guaranteed to wake up your taste buds and leave you feeling satisfied and energized.

Step-by-step

    • Place hash browns in a skillet and cook until golden brown. Salt and pepper to taste.
    • Brown your ground beef in another skillet. When done, add the Bueno chopped green chili and let simmer for about 15 minutes.
    • Fry the eggs and the bacon.
    • While the eggs and bacon are cooking, take 4 or 5 flour tortillas, wrap them in foil, and place them in a preheated oven at 400 degrees.
    • When the tortillas are done, place hash browns on a plate along with the eggs and bacon.
    • Take your ground beef and chili mixture and smother some of it over the hash browns.
    • Sit down and eat with the flour tortillas.
