A Taste of Provence: My Swiss Chard Gnocchi Adventure

As a busy working mom, finding time to cook delicious and satisfying meals can often feel like a Herculean task. My days are filled with emails, meetings, and school runs, leaving precious little time for elaborate culinary creations. Yet, I crave those moments of genuine culinary pleasure, those meals that nourish not only my body but also my soul. This is where my love for simple yet elegant recipes like this Swiss Chard Gnocchi comes in.

I discovered this recipe during a recent trip to the south of France. The vibrant colors and aromas of Provence captured my heart, and the food, oh, the food! It was an explosion of fresh herbs, ripe tomatoes, and the comforting warmth of home-style cooking. This particular gnocchi recipe, with its unexpected addition of Swiss chard, was a revelation. It's a testament to the ingenuity of Provençal cuisine, transforming humble ingredients into something truly special. The earthy notes of the chard perfectly complement the soft, pillowy texture of the gnocchi, creating a harmonious blend of flavors and textures.

The beauty of this recipe lies in its simplicity. The ingredients are readily available, and the process, while involving a few steps, is surprisingly straightforward. I’ve learned that the key to good cooking lies not in the complexity of the techniques, but in the quality of the ingredients and the love you put into the preparation. And this recipe is brimming with love - a love for good food, a love for tradition, and a love for the simple things in life.

Making the gnocchi itself is a wonderfully therapeutic process. The feel of the dough between my fingers, the satisfying rhythm of rolling and cutting the little dumplings, it’s a meditation of sorts. And the aroma that fills my kitchen as the gnocchi simmer in the water is simply divine – a comforting promise of a delicious meal to come. I often find myself making a double batch, not just for dinner, but also for a quick and satisfying lunch the next day. The leftovers are just as delicious cold, perhaps with a sprinkle of extra Parmesan cheese.

The best part? This dish is incredibly versatile. While the recipe suggests a fresh tomato-herb sauce, feel free to experiment! A creamy pesto sauce, a light lemon butter sauce, or even a simple sage brown butter would complement the gnocchi beautifully. The beauty of cooking, I've discovered, lies in the freedom to adapt recipes to your own taste and preferences.

Step-by-step

    • Steam potatoes until very tender, about 50 minutes. Cool potatoes slightly, then peel.
    • Mash potatoes in large bowl until smooth. Mix in salt and pepper.
    • Meanwhile, bring 2 inches of salted water to boil in large pot. Add chard and cook until wilted, stirring occasionally, about 3 minutes.
    • Drain chard; cool. Squeeze out as much excess liquid as possible. Finely chop chard in processor.
    • Mix chard into potato mixture. Stir in egg and oil.
    • Gradually mix in enough flour to form soft, slightly sticky dough.
    • Dust baking sheet with flour. Working in batches and using floured hands, roll 1/4 cup dough on lightly floured work surface to form 12-inch-long rope. Cut rope into 1-inch pieces. Roll each piece between palms to form oval ball. Using whisk, gently roll each ball down length of wires, making ribbed impressions in gnocchi. Transfer gnocchi to prepared baking sheet. Repeat rolling, cutting and shaping with remaining dough.
    • Working in batches, cook gnocchi in large pot of boiling salted water until gnocchi rise to surface and are tender, about 6 minutes. Using slotted spoon, transfer gnocchi to large bowl. (Can be made 1 day ahead. Place gnocchi in single layer on oiled baking sheet. Cover with plastic; chill.)
    • Melt butter in heavy large skillet over medium-high heat. Add gnocchi and sauté until coated with butter and heated through, about 3 minutes.
    • Meanwhile, bring sauce to simmer in heavy medium saucepan, stirring occasionally.
    • Ladle sauce onto plates.
    • Spoon gnocchi atop sauce. Sprinkle with cheese and serve.
