Black Rice Pudding
Commonly served for breakfast in parts of Southeast Asia, this dish also makes a great dessert. Chinese black rice, sometimes called forbidden rice, works well, but if you live near a Southeast Asian market you can use this same method with the more traditional Thai black sticky rice. If you cant find any kind of black rice, substitute brown rice (not quick-cooking) it will result in a thicker, light-colored pudding but will still be delicious.

I discovered this recipe while on a business trip to Thailand. The vibrant markets and street food stalls were a feast for the senses, and this black rice pudding, served warm in a small clay bowl, became an unexpected highlight. Its subtle sweetness and creamy texture were incredibly comforting after a long day of meetings. The beauty of this recipe lies in its versatility. You can easily adapt it to your taste. A sprinkle of toasted coconut flakes, a drizzle of honey, or even a dollop of fresh whipped cream can add a touch of extra luxury.

The most surprising aspect of this dish is its simplicity. It requires minimal ingredients and cooking time. Perfect for busy weeknights when you're craving something delicious and nourishing, without spending hours in the kitchen. Unlike other rice puddings, the black rice lends itself to a unique texture—it's creamy, yet retains a satisfying chewiness. It's a remarkable balance of textures and flavors, leaving you feeling fully satisfied but not overly full.

Beyond its deliciousness, this Black Rice Pudding offers nutritional benefits too. Black rice is packed with antioxidants, offering a healthy twist on a classic comfort food. It's a guilt-free indulgence, a small treat that makes a big impact on both your taste buds and your wellbeing. I often prepare a large batch on the weekend and store it in the refrigerator, ensuring a delicious and healthy breakfast or dessert option throughout the week.

The versatility of this recipe is also what makes it so appealing. It adapts effortlessly to different dietary preferences and tastes. For instance, substituting the coconut milk with almond milk can make it a vegan-friendly option. Feel free to experiment with spices – a dash of cinnamon or cardamom can add warmth and complexity. Adding fresh fruits like mangoes or berries just before serving can enhance the visual appeal and introduce vibrant flavors. Ultimately, this Black Rice Pudding is a blank canvas, inviting you to express your own culinary creativity.

More than just a recipe, this black rice pudding represents a journey, a reminder of the unexpected pleasures found in the simplest of dishes. Step-by-step

    • Bring rice, 3 cups water, and 1/4 teaspoon salt to a boil in a 3- to 4-quart heavy saucepan, then reduce heat to low and simmer, covered with a tight-fitting lid, 45 minutes (rice will be cooked but still wet).
    • Stir in sugar, a scant 1/4 teaspoon salt, and 1 1/2 cups coconut milk and bring to a boil over high heat, then reduce heat to low and simmer, uncovered, stirring occasionally, until mixture is thick and rice is tender but still slightly chewy, about 30 minutes.
    • Remove from heat and cool to warm or room temperature, stirring occasionally, at least 30 minutes.
    • Just before serving, stir pudding and divide among 8 bowls.
    • Stir remaining coconut milk and drizzle over pudding.
