A Taste of Home: Chicken and Pork Stew with Plantains and Potatoes

The aroma of spices, the sizzle of meats, the comforting warmth of a hearty stew – these are the things that conjure up memories of home, especially when you’re far away. As a woman who's lived abroad for over two decades, my kitchen has become a bridge connecting me to my roots and my adopted home. This Chicken and Pork Stew with Plantains and Potatoes is a testament to that connection. It’s a dish that embodies the rich flavors of the Dominican Republic, where I’ve built a life and a community, but also carries within it the heartiness and simplicity of home-style cooking.

It all started with a friendship, a shared passion for food, and a desire to truly immerse ourselves in Dominican culture. My friend Sheila and I, both originally from the US, have spent the last 25 years in this vibrant country. We’re not just neighbors, we’re business partners, and most importantly, we’re friends who love to share meals together. Cooking has become a central part of our social lives, a way of bringing people together and celebrating this beautiful country we call home. Our kitchen, often filled with laughter and the comforting sounds of cooking, has become a hub of our community, a place where we can share stories, celebrate life, and savor the flavors of the Dominican Republic. This recipe, our Chicken and Pork Stew, isn’t just a recipe, it’s a story of friendship, cultural exchange, and the joy of creating meaningful connections through food.

The stew itself is a beautiful blend of textures and tastes. The tender chicken and pork, slow-cooked until succulent, combine harmoniously with the sweetness of plantains and the earthiness of potatoes. The spices – a warm embrace of allspice, oregano, and a hint of cayenne – create a depth of flavor that’s both exciting and comforting. The whole experience is more than just a meal; it’s a sensory journey, a reminder of the vibrant tapestry of life that I’ve woven here in the Dominican Republic. Each ingredient tells a story: the vibrant green cilantro, a symbol of freshness; the rich, savory broth, a testament to slow cooking; and the tender plantains, a nod to the land's bounty. The simplicity of the recipe is a testament to the quality of the ingredients – fresh, locally sourced whenever possible – creating a meal that is both nourishing and delicious.

Sharing meals like this with friends and family is what life is all about. It’s a way to connect on a deeper level, to forge lasting bonds and create memories that will last a lifetime. This stew, I hope, will not only nourish your body but will also bring warmth, connection, and a little taste of the Dominican Republic to your own table. So gather your friends, family, or even just yourself, and enjoy this flavorful journey.

Beyond the recipe itself, this stew represents so much more. It's a symbol of my journey, a culinary reflection of my life in the Dominican Republic. It’s a dish that embodies the spirit of community, friendship, and the simple joys of sharing a delicious meal. It's a taste of home, a taste of belonging, and a taste of something truly special.

    • Trim off plantain ends and cut 4 vertical slits in skin of each (do not cut into fruit).

    • Add plantains, broth, tomatoes with juice, onion, pepper, and vinegar.
    • Bring to a boil.
    • Reduce heat to medium-low; cover and simmer 20 minutes.
    • Add potatoes and corn to the pot.
