My family loves these little German dumplings fried in butter. I have an actual spaetzle maker, but if you don't have one, feel free to use a colander with wide holes.

Herbed Spaetzle: A Simple German Delight

My Favorite Comfort Food: Herbed Spaetzle

As a busy working mom, finding time to cook delicious, satisfying meals can be a real challenge. Weeknights often revolve around quick and easy solutions, but I also crave those moments of culinary indulgence that transport me back to simpler times, to cozy evenings spent with family around the dinner table. That's where my Herbed Spaetzle recipe comes in – a dish that’s both surprisingly simple to make and deeply satisfying in flavor and texture.

I first discovered spaetzle during a trip to Germany. I was captivated by the charm of the quaint villages and the warmth of the people, but it was the food that truly stole my heart. Each bite of spaetzle, these tiny, pillowy dumplings, was an explosion of simple yet profound flavors. Since then, spaetzle has become a cherished staple in my own kitchen, a dish I regularly make to remind myself of that amazing trip and the wonderful memories associated with it.

This isn't your average weeknight dinner; it's a culinary adventure that transports you. The delightful aroma of freshly grated nutmeg mingling with the bright, herbaceous notes of dill, tarragon, parsley, chives and chervil, fills your kitchen, creating an atmosphere of warmth and delicious anticipation. The subtle sweetness of the butter perfectly complements the savory spaetzle and the final touch of fresh lemon juice adds a burst of freshness and zing. It’s a dish that's as comforting as it is elegant, a perfect balance of simplicity and sophistication.

But what truly makes this dish special is the process itself. The act of gently pressing the batter through the spaetzle maker, or even a simple colander, is incredibly therapeutic and meditative. It allows me to slow down, to focus on the present moment, and to connect with the culinary process in a meaningful way. It's a moment of mindful cooking, a pause in the whirlwind of daily life. And the results? Oh, the results are simply divine. Each tender, perfectly browned dumpling is a testament to the simple pleasure of creating something delicious from scratch.

The beauty of this recipe lies in its adaptability. Feel free to experiment with different combinations of fresh herbs to suit your own taste. A dash of garlic powder or onion powder can add a savory kick, while a sprinkle of Parmesan cheese before serving can add a wonderful umami depth. It is a recipe that welcomes your personal touch and creativity.

Beyond the inherent deliciousness, there's a certain satisfaction in making something from scratch that you know will be devoured by your family. It's a love letter crafted in the kitchen, expressing care and affection in every bite. This Herbed Spaetzle recipe has become more than just a dish; it’s a tradition, a testament to the power of simple ingredients transformed into something truly extraordinary. It’s a cherished memory that I recreate time and time again, not just for the delightful taste, but for the moments of connection and joy that it brings.

Ingredients:

  • 3 large eggs
  • 1/4 cup butter
  • 1 cup whole milk
  • 2 tablespoons fresh herbs (dill, tarragon, parsley, chives, chervil)
  • 1/4 teaspoon freshly grated nutmeg
  • 3 cups all-purpose flour (more or less, as needed)
  • Fresh lemon juice, to garnish

So, the next time you're searching for a flavorful, comforting meal that will bring a smile to your family's face (and warm your own heart), give this Herbed Spaetzle recipe a try. It's a culinary embrace you won't soon forget.

Step-by-step

    • Bring one gallon of water to a boil. After the water boils, add 1 tablespoon of salt. Keep the water at a simmer.
    • Meanwhile, in a large bowl whisk together the eggs, milk, herbs, nutmeg, salt and pepper. Gradually add enough flour to form a thick dough. All three cups may not be needed.
    • Place a colander or spaetzle-maker over the top of the pot of water. Press 1/3 to 1/4 of the spaetzle batter through the holes into the simmering water. Cook the spaetzle, stirring frequently, until the dumplings float to the top of the water, about 4 minutes. Remove the dumplings with a slotted spoon or shallow strainer into a bowl of ice water. Repeat the process with the remaining dough until it is all used.
    • In a large skillet melt the butter over medium-high heat until the foam subsides. Drain the spaetzle and add them to the pan, and saute, stirring frequently, until the spaetzle are golden. Season with salt and pepper, and a squeeze of lemon juice, if desired.
