The Celtic Buck
The Celtic Buck
A "buck" is a traditional type of drink containing a spirit, lemon or lime juice, and ginger ale. Julie Reiner, the owner-mixologist of New Yorks Clover Club cocktail bar, serves this version during the holiday season. It has a Scotch whisky base and a balanced mix of autumnal and winter flavors: pear, allspice, ginger, and cinnamon. The recipe makes more allspice syrup than youll need, but the extra will keep for up to three weeks and is delicious in gløgg or a Tom & Jerry. It can also be served as a nonalcoholic beverage, sans Scotch.

The Celtic Buck: A Festive Twist on a Classic Cocktail

As a busy professional woman, juggling a demanding career and a social life can feel like a constant tightrope walk. Finding moments of peace and enjoyment is essential, and for me, that often involves creating a little bit of magic in my kitchen – or in this case, behind my home bar. The Celtic Buck has become one of my go-to drinks for those precious moments of self-care, a delicious and sophisticated cocktail that perfectly balances festive cheer with a sophisticated simplicity.

The beauty of this drink lies not just in its exquisite taste, but also in its versatility. It's easily adaptable to different occasions and moods. During the colder months, when the air is crisp and the holidays are drawing near, the warm spices and the smooth Scotch create a comforting and celebratory atmosphere. It's a perfect drink to share with friends during a cozy gathering, or to savor quietly while reflecting on the day. Yet, its elegance transcends the holiday season. The refreshing combination of pear, lemon, and ginger keeps it vibrant and light enough for summer evenings, allowing it to shine all year round.

Beyond its adaptability, the Celtic Buck also embodies the spirit of mindful creation. The process of making the allspice syrup, though straightforward, is a meditative experience. The gentle simmering of the water, sugar, and spices, the fragrant steam filling the air, it's a small ritual that slows down the pace and brings focus to the present moment. This sense of mindful preparation infuses the drink with a special quality, elevating it beyond a mere beverage to a small act of self-care.

I've often found myself recommending this recipe to friends who are also seeking ways to incorporate small moments of luxury into their busy lives. The satisfaction of creating something delicious and beautiful from simple ingredients is immensely rewarding. The process itself, the attention to detail in crafting the syrup and assembling the cocktail, becomes a form of stress relief, a small rebellion against the relentless demands of modern life. It's a reminder to appreciate the small things, to find joy in the simple act of creation and sharing.

And truly, what’s more delightful than sharing a thoughtfully crafted drink with loved ones? This is not just a cocktail; it's an experience, a moment of connection, and a perfect expression of seasonal hospitality.

So, next time you find yourself needing a little respite, I encourage you to try the Celtic Buck. It’s more than just a drink; it’s a journey to a mindful moment of personal indulgence.

Step-by-step

    • Make allspice syrup: If using whole allspice, in spice or coffee grinder, buzz until powdery (about 20 seconds)
    • In medium saucepan over moderately high heat, combine 2 cups water and sugar, stirring until sugar dissolves. Bring to boil, then stir in allspice.
    • Remove from heat and let stand 45 minutes. Strain through fine-mesh sieve. (Syrup can be made ahead and refrigerated, tightly covered, up to 3 weeks.)
    • Make cocktail: In cocktail shaker, combine Scotch, pear nectar, lemon juice, and 1 tablespoon allspice syrup.
    • Fill with ice and shake 20 seconds.
    • Strain drink into tall glass filled with fresh ice.
    • Top with ginger ale.
    • To garnish, insert toothpick through pear slices to create fan. Tuck fan into top of glass, then add cinnamon stick and straws.
