A Taste of Greece on a Dreary March Day: Chicken Gyros

March. The month that stretches on forever, a seemingly endless expanse of gray skies and chilly winds. At least, that’s how it feels here. I find myself daydreaming of sun-drenched cafes, the kind you find nestled on picturesque Greek islands. The scent of the sea air, the warmth on my skin… a far cry from the reality outside my window. But you know what? I've found a way to bring a little bit of that Greek sunshine into my kitchen, and it's all thanks to these incredible chicken gyros.

These aren't your average, run-of-the-mill sandwiches. Oh no. These are a culinary journey, a vibrant explosion of Mediterranean flavors that will transport your taste buds straight to the Aegean Sea. The tender, flavorful chicken, marinated just right, is the star of the show. But it's the supporting cast that truly elevates this dish to another level. The creamy, cool tzatziki sauce, with its tangy yogurt and refreshing herbs, perfectly balances the richness of the chicken. And then there's the salsa – a bright and zesty medley of juicy tomatoes, crisp cucumbers, and fragrant herbs. It's the perfect counterpoint to the richness of the meat and the creaminess of the sauce.

I love how versatile this recipe is. It's easy enough for a weeknight dinner, yet impressive enough to serve to guests. The preparation is surprisingly straightforward, and the results are absolutely delightful. The aroma alone is enough to make you forget the dreary weather outside. The warm pita bread, the juicy chicken, the cool tzatziki, and the vibrant salsa… it’s a symphony of textures and flavors that will leave you feeling satisfied and utterly transported.

More than just a meal, this is an experience. It’s about taking a moment to savor the flavors, to appreciate the simple pleasures of good food, and to momentarily escape the gray realities of a long March day. It’s about bringing a little sunshine into your life, one delicious gyro at a time. And let me tell you, on a cold, dreary day, there's nothing quite like it. The warmth of the pita, the satisfying chew of the chicken, the refreshing coolness of the tzatziki and salsa...it's a perfect balance that leaves you feeling full, happy, and ready to face whatever March throws my way.

This recipe has become a staple in my household. It's a go-to when I need a quick, flavorful, and satisfying meal that doesn't require hours of cooking. The leftovers are fantastic, too – perfect for lunch the next day. And the best part? It's incredibly adaptable. Feel free to experiment with different herbs, vegetables, or even types of meat. The possibilities are endless!

So, next time you find yourself longing for a taste of sunshine, reach for this recipe. It’s a guaranteed mood booster, a culinary escape that will whisk you away to warmer, sunnier climes, even if only for a little while. And trust me, in the midst of a long, cold March, that little while makes all the difference.

I hope you enjoy this recipe as much as I do! Let me know in the comments how it turns out.

Step-by-step

    • Preheat broiler.
    • Peel and grate 1 cucumber, then squeeze it with your hands to remove excess water. Stir together with yogurt, 1/2 teaspoon lemon juice, one third of garlic, and 1/4 teaspoon each of salt and pepper to make tzatziki.
    • Cut remaining cucumber into 1/4-inch pieces and stir together with tomatoes, onion, parsley, mint, remaining 1/2 teaspoon lemon juice, and 1/4 teaspoon each of salt and pepper to make salsa.
    • Gently simmer oil, oregano, rosemary, remaining garlic, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a small heavy saucepan, stirring constantly, until garlic is fragrant but not browned, 1 to 2 minutes. Toss chicken with 3 tablespoons garlic oil and brush one side of bread with remainder.
    • Heat bread, oiled side up, in a 4-sided sheet pan, covered with foil, 3 to 4 inches from broiler 3 minutes. Uncover and broil, rotating bread for even coloring, until golden in spots, about 2 minutes.
    • Spread some of tzatziki on warm bread and top with chicken and some of lettuce and salsa. Serve remaining lettuce, salsa, and tzatziki on the side.
