Smores Dark Chocolate Puddings

Smores Dark Chocolate Puddings
I have never understood why pudding has not inspired the same passion as the ubiquitous cupcake. Pudding is Americana personified and every bit as interesting and delicious as any other dessert, but for some reason it is not as glorified as some of its peers. Perhaps it's because pudding is not as visually exciting? In an attempt to add a bit of visual flair to pudding, we created a Smores version that looks great in a clear glass (or glass container). To us, diner desserts equal layered desserts, and the layers of dark chocolate pudding look terrific with the alternate layers of toasted graham. The marshmallow topping is both tasty and a tad sexy. It’s about time pudding got its groove back.

A Housewife's Ode to the Smores Dark Chocolate Pudding

Oh, pudding! For years, I’ve felt you were the unsung hero of the dessert world. While cupcakes and cakes get all the accolades, the humble pudding sits quietly in the corner, a delicious, comforting classic. But today, my friends, we’re giving pudding the spotlight it deserves. And we're doing it with a S'mores twist!

My family, bless their hearts, can demolish a batch of these S'mores Dark Chocolate Puddings in record time. It started as a whim – an experiment in adding a little visual pizzazz to a classic dessert. I wanted something more than the usual bowl of plain pudding. I envisioned layers, a textural journey that would delight the eye as much as the palate. And the result? Pure, unadulterated deliciousness. This recipe is far from your average pudding cup; it’s a sophisticated, layered dessert that's surprisingly easy to make, even for a busy mom like myself.

The graham cracker crumb layer provides a satisfying crunch that perfectly complements the smooth, rich chocolate pudding. And then there's the marshmallow topping – oh, that glorious marshmallow topping! The slightly toasted, gooey sweetness adds a touch of indulgence that takes this dessert to another level. Honestly, even I'm slightly obsessed with this perfect balance of textures and flavors. It's the kind of dessert that’s perfect for a cozy night in, a special occasion, or even just a well-deserved treat after a long day of juggling kids, work, and everything in between.

Making these puddings is a wonderfully therapeutic process. The careful layering, the gentle whisking, the satisfying sizzle of the kitchen torch – it's a meditative experience that allows me to unwind and focus on something other than the never-ending to-do list. And the smiles on my family's faces when they take their first bite? Priceless. It's a reminder that even in the midst of chaos, there's always time for a little bit of sweetness.

I encourage you to try this recipe. It's not just a dessert; it’s an experience. It's a testament to the simple joys of homemade goodness. It’s a way to show your loved ones (or yourself!) how much you care, one perfectly layered, torch-toasted spoonful at a time.

Beyond the Recipe: A Reflection on Simple Pleasures

This S’mores Dark Chocolate Pudding recipe is more than just a collection of ingredients and instructions. It's a reminder to slow down, to appreciate the small things, and to find joy in the everyday. In a world that often feels overwhelming, the act of creating something delicious from scratch—something that brings smiles and happiness to those around me—is incredibly grounding. It’s a connection to something deeper, a connection to tradition and community, and a celebration of the simple pleasures in life.

The process of baking itself is a meditation. The methodical measuring, the careful whisking, the precise layering – it's a rhythm that calms the mind and centers the spirit. And the anticipation of sharing the final product with loved ones is a sweet reward in itself. It's a moment of connection, a shared experience that transcends the mere act of eating.

Ingredients and Their Stories

Even the ingredients themselves hold a special place in my heart. The rich, dark chocolate, a symbol of indulgence and self-care; the crunchy graham crackers, a nostalgic nod to childhood campfire memories; the fluffy marshmallows, a reminder of playful sweetness. Each ingredient contributes to the overall experience, creating a symphony of flavors and textures that resonate with my soul.

This dessert is a perfect example of how simple ingredients can be transformed into something extraordinary. It's a testament to the power of creativity and the ability to find magic in the mundane. And it's a reminder that sometimes, the greatest pleasures in life are the simplest ones.

So, go ahead. Make this pudding. Savor each bite. And let it be a reminder to find the sweet moments in your own life, no matter how busy or chaotic things might seem.

Step-by-step

    • Preparation For graham cracker crumb layer: Preheat oven to 300°F. Line rimmed baking sheet with parchment paper. Combine all ingredients in processor. Using on/off turns, blend until coarse crumbs form. Spread crumbs out on prepared baking sheet (if necessary, break up any large pieces with fingertips). Bake until crumbs are crisp, stirring once, about 10 minutes. Cool. DO AHEAD: Can be made 1 day ahead. Store airtight at room temperature.
    • For puddings: Whisk sugar, cornstarch, cocoa powder, espresso powder, and salt in heavy medium saucepan. Add egg yolks and whisk to blend (mixture will resemble wet sand). Gradually whisk in milk, then cream. Whisk constantly over medium heat until mixture comes to boil, then boil 30 seconds. Remove from heat. Add chocolate, whiskey, butter, and vanilla; whisk until chocolate and butter melt and mixture is smooth. Let pudding cool slightly, whisking occasionally, about 10 minutes.
    • Spoon 1/3 cup pudding into each of six 1-cup glasses; spread evenly. Sprinkle each with graham cracker crumbs, dividing equally. Top each with 1/3 cup pudding, spreading evenly. Cover each with plastic wrap, pressing plastic directly onto pudding. Chill at least 2 hours. DO AHEAD: Can be made 1 day ahead. Keep chilled.
    • For marshmallow topping: Blend all ingredients in large bowl of stand mixer fitted with whisk attachment. Set mixer bowl with egg white mixture over saucepan of simmering water. Using hand whisk, whisk mixture constantly until instant-read thermometer inserted into mixture registers 160°F, about 6 minutes. Attach mixer bowl with egg white mixture to stand mixer again and beat on high speed until marshmallow topping forms stiff peaks, 6 to 8 minutes.
    • Top each pudding with 2 large spoonfuls of marshmallow topping, covering top completely and creating peaks, if desired. DO AHEAD: Can be made 2 hours ahead. Chill.
    • Using kitchen butane torch, lightly toast marshmallow topping until golden in spots.
