Why Fujis? This not-too-sugary cake (inspired by carrot cake) is best when made with fairly sweet apples. Plus, it's important to choose an apple variety with a sturdy structure so that it won't break down during baking. Fuji apples fill the bill on both counts.

A Baker's Tale: The Fuji Apple Spice Cake Adventure

The aroma of warm spice and apples wafts through my kitchen, a comforting scent that instantly transports me back to childhood Sundays. Today, I’m sharing a recipe that’s close to my heart: a Fuji apple spice cake with a creamy, decadent cream cheese frosting. It's a recipe born not from a professional cookbook, but from years of experimenting in my own humble home kitchen. The quest for the perfect autumnal cake, one that balances the warmth of spices with the crisp sweetness of apples, led me down this deliciously rewarding path.

Choosing the right apple is key. I've experimented with many varieties, but for this cake, the Fuji apple reigns supreme. Its firm texture holds up beautifully during baking, preventing the dreaded mushy apple bits that can ruin a perfectly good cake. And its natural sweetness perfectly complements the warm spices, reducing the need for excessive sugar. This isn't just any apple cake; it's a celebration of autumn's bounty, a testament to the simple pleasure of baking something delicious from scratch.

The baking process itself is a journey. From creaming the butter and sugar until light and fluffy, to the careful folding in of the spiced flour mixture, every step is infused with intention. The scent of cinnamon, allspice, and nutmeg fills the air, promising the delicious reward that awaits. The act of layering the moist cake layers with the luscious cream cheese frosting is almost meditative. It's a moment of quiet concentration, a mindful approach to creating something beautiful and delicious.

But this cake isn’t just about the perfect recipe; it's about the memories it creates. It’s the image of my family gathered around the kitchen table, the happy chatter and laughter echoing through the room as we slice into this sweet masterpiece. It’s the feeling of warmth and contentment that comes from sharing something homemade, something made with love. The cake itself is a symbol of connection, a sweet treat that brings people together.

More than just a recipe, this is a tradition. A tradition of gathering, of sharing, and of savoring the simple pleasures of life. It's a tradition I'm happy to share with you. So, gather your ingredients, preheat your oven, and prepare for a baking adventure that will delight your senses and warm your soul. This Fuji apple spice cake is more than just a dessert; it's an experience. It’s a taste of home, a reminder of the simple joys, and a testament to the power of a perfectly baked cake to bring people together.

The beauty of this recipe lies in its adaptability. Feel free to experiment with different nuts, spices, or even a touch of bourbon for an added layer of complexity. The possibilities are endless, and that's part of the fun! The important thing is to enjoy the process, to find joy in the act of creating something delicious. And to share that deliciousness with those you love most. This cake isn't just about the recipe; it's about the memories you'll create while baking it and the joy you'll share while eating it.

I hope this recipe inspires you to create your own special moments in the kitchen, moments filled with the aroma of warm spices, the sweetness of apples, and the simple joy of homemade goodness. Happy baking!

Step-by-step

    • Position rack in center of oven and preheat to 350°F. Butter and flour two 9-inch-diameter cake pans with 2-inch high sides. Line bottom of each pan with parchment paper round.
    • Whisk first 7 ingredients in medium bowl.
    • Using electric mixer, beat 1 cup butter in large bowl until fluffy. Add both sugars and beat until smooth. Add eggs 1 at a time, beating well after each addition. Beat in vanilla, then bourbon, if desired (mixture may look curdled).
    • Add flour mixture to egg mixture in 3 additions alternately with applesauce in 2 additions, beating until blended after each addition. Stir in apples and pecans.
    • Divide batter between cake pans; smooth tops.
    • Bake cakes until tester inserted into center of each comes out clean, about 50 minutes. Transfer cakes to racks and cool in pans 15 minutes. Cut around pan sides to loosen cakes. Invert cakes onto racks; peel off parchment paper. Place another rack atop 1 cake and invert again so that cake is rounded side up. Repeat with second cake. Cool completely.
    • DO AHEAD: Can be made 1 day ahead. Wrap each cake in plastic and store at room temperature.
    • Using electric mixer, beat cream cheese and butter in large bowl until smooth. Beat in vanilla extract and pinch of salt. Gradually add powdered sugar, beating until frosting is smooth and creamy, about 2 minutes.
    • Using long serrated knife, trim off rounded tops of cakes to make level; brush off any loose crumbs. Transfer 1 cake to platter, trimmed side up. Drop half of frosting (about 1 1/2 cups) by spoonfuls atop cake. Spread frosting evenly to edges of cake.
    • Top with second cake, trimmed side down. Drop remaining frosting by spoonfuls onto top of cake, leaving sides of cake plain. Spread frosting to top edges of cake, swirling and creating peaks, if desired. Sprinkle with pecans.
    • Let cake stand at room temperature 1 hour to allow frosting to set slightly.
    • DO AHEAD: Can be made 1 day ahead. Cover with cake dome and refrigerate. Let cake stand at room temperature at least 2 hours before serving.
