  • 1 red bell pepper chopped
  • 1 bag (~12 oz.) corn tortilla chips
  • 1 small yellow onion caramelized*, roughly chopped
  • 8 oz package sharp cheddar cheese grated
  • 8 oz package monterey jack cheese grated
  • 15 oz can black beans drained and rinsed, patted dry
  • 1 small bag (~1 cup) frozen corn thawed or boiled according to package instructions
  • 1 4-oz. can green chiles drain excess liquid
  • 1 small can jalapeno peppers (or 1 fresh, minced) drain excess liquid and slice
  • 1 cup salsa (i use pico de gallo) drain excess liquid
  • 1 cup guacamole (or mashed avocado)
  • 4 leaves romaine shredded

As an avid home cook, I'm always on the lookout for simple and delicious recipes. When I stumbled upon this recipe for gourmet nachos, I was immediately intrigued. I'm so glad I did! These nachos did not disappoint. They were incredibly easy to make, and they were absolutely delicious. Step-by-step

    • Lay half of the tortilla chips on one large metal baking pan, reducing as much overlap of chips as possible. It is easiest to use shallow pans with a small lip.
    • Sprinkle half of the shredded cheeses evenly over chips.
    • Repeat with remaining chips and cheese.
    • Broil until cheese is mostly melted. This should only take a couple minutes.
    • Pull pan out of oven and spoon beans, corn, red bell pepper, hot green chilies, onions and jalapenos on top of chips.
    • Turn oven off then place pan back in warm oven for a couple more minutes.
    • Take pan out of oven again and spoon salsa and guacamole on top of chips. Finally sprinkle shredded lettuce on top.
