My Authentic Thai Pork Satay Recipe

A Taste of Thailand: My Simple Pork Satay Recipe

As a busy professional, I cherish quick and flavorful meals. This Thai Pork Satay recipe has become a staple in my weeknight rotation, and a go-to dish for entertaining friends. It’s authentic, undeniably delicious, and surprisingly simple to make, even on a busy schedule. Forget those complicated, time-consuming recipes; this one gets straight to the point, delivering incredible flavor without the fuss. The key, I've found, is in the marinade. Let the rich blend of herbs and spices work their magic on the pork, transforming ordinary chops or loin into something truly extraordinary. The beautiful char-grilled lines add a touch of visual appeal and a delightful smoky note, taking this dish from simple supper to something truly special.

I remember first trying Pork Satay at a bustling street market in Bangkok. The air was thick with the fragrant aroma of grilling meat and exotic spices, and the vibrant colors of the food stalls painted a vivid picture. The satay itself, tender and juicy, was an explosion of flavor in my mouth. The peanut sauce, creamy and nutty, was the perfect complement. That experience ignited a passion within me, a desire to recreate that incredible taste at home. After much trial and error, experimenting with different spice combinations and techniques, I perfected this recipe. It embodies the essence of that unforgettable Thai street food experience, bringing a taste of Thailand right to my kitchen table.

The beauty of this recipe lies in its adaptability. Feel free to experiment with different cuts of pork – chops, loin, even tenderloin work beautifully. Adjust the marinade time depending on your schedule; a longer marinade will result in more intense flavor. And don't be afraid to play with the ingredients – add a pinch of extra chili flakes for a spicier kick, or substitute some of the herbs and spices to suit your preferences. The foundation is solid, but the creativity is yours. The recipe also travels well. I often make a double batch, enjoying some for dinner and packing the rest for lunch the next day. The flavors meld together even more beautifully after a night in the fridge. It's a versatile dish that caters to busy lifestyles and adventurous palates.

Beyond the culinary aspects, this recipe represents more than just food for me; it’s a connection to a culture I adore and a way to share a bit of that with others. It’s a reminder of the vibrant energy of Bangkok's street markets and the warmth of Thai hospitality. It's a simple yet satisfying way to add a touch of exotic flair to my everyday life, a reminder that even amidst a busy schedule, I can indulge in a little bit of culinary adventure.

Step-by-step

    • Using a pestle and mortar combine the herbs and spices, salt and sugar.
    • Put in a large bowl and add the coconut milk.
    • Trim the chops and cut into 5 mm Strips. Butterfly a full loin fillet and cut into strips.
    • Add to the marinade and leave for 2 - 12 hours. (The more the merrier)
    • Cook on a hot grill and baste with any remaining marinade. Cook on a medium heat until just under done, then clean the grill, put on high then add the meat back to give those char-grilled lines.
    • If not using all straight away, leave the charring until just before serving.
    • Serve with peanut satay dipping sauce.
