Wheat Free. If there was ever a reason to call a veggie burger hippie food, then this burger fits the bill. Inspired by watching The Drug Years on VH1 and, of course, dear and sweet Simon & Garfunkel, these burgers are sure to please your peace-lovin pals. Normally, I advocate the use of fresh herbs, but for this one, dried ones work best. I also tend to overspice things, so please, unless you really like the flavors of these herbs, feel free to cut the amounts down.

What initially drew me to this recipe wasn't just the intriguing name but the promise of a flavorful and healthy veggie burger, free of wheat. I'm always looking for ways to sneak in more vegetables and plant-based protein into my family's diet, and these burgers seemed like the perfect solution. Plus, the idea of using dried herbs instead of fresh ones appealed to my busy schedule. No more frantic dashes to the grocery store for fresh parsley, sage, rosemary, and thyme!

The preparation process was surprisingly straightforward. The recipe's instructions were clear and easy to follow, even for a novice cook like myself. I loved the simplicity of combining the ingredients, and the result was a wonderfully textured burger patty. Crumbling the tofu and mixing it with the herb mixture was therapeutic, almost meditative. It allowed me to briefly disconnect from the day's chaos and focus on creating something delicious.

I opted to bake the burgers instead of frying them, as suggested in the recipe. This choice aligned perfectly with my desire for a healthier meal. The baking process was quick and easy, and the burgers came out perfectly cooked, with a nice firm texture. The aroma filling my kitchen as they baked was simply divine - a fragrant mix of herbs and earthy tofu. It was a small moment of domestic bliss amidst the everyday whirlwind.

The final result? These Scarborough Fair Tofu Burgers were a resounding success! My family devoured them, and I felt a sense of pride in serving them a wholesome, delicious meal. These burgers are not only healthy and flavorful but also incredibly versatile. I served mine on whole-wheat buns with all the usual burger fixings – lettuce, tomato, onion, and a generous dollop of my homemade vegan mayonnaise. They would also be amazing in salads, tacos, or even as a standalone protein source for a quick lunch.

Step-by-step

    • Grind the parsley, sage, rosemary, and thyme into a fine powder. I use a coffee grinder for this.
    • In a mixing bowl, crumble the tofu and mix well with the spice mixture so that the herbs are well infused with the tofu. Let sit for the flavors to meld.
    • In a microwave-safe bowl, mix together the TVP granules and the broth, cover tightly with plastic wrap, and microwave for 5 to 6 minutes. Alternatively, bring the broth to a boil, pour over the TVP, cover, and let sit for 10 minutes.
    • When cool enough to handle, add the TVP to the tofu mixture, then add the minced garlic, flaxseed mixture, sunflower seeds, pumpkin seeds, and salt and pepper to taste. Mix with your hands until all the ingredients are very well incorporated. The mixture will be nice and smooth, and should form lovely burgers. Shape into 6 patties. Refrigerate until ready to cook, although refrigeration isn't necessary if you plan on cooking them right away.
    • I recommend baking these rather than frying. It just seems that this burger is too healthy to fry. Preheat the oven to 350°F (180°C, or gas mark 4) and line a baking sheet with parchment or a silicone baking mat. Bake, covered with a foil tent, for 15 minutes per side.
