Simple Syrup
Simple Syrup is the most basic sweetener used in cocktails, and as the name states, it's simple—made of just sugar and water. Like salt, sugar is a flavor enhancer, and simple syrup is used to bring out the character of other cocktail ingredients. Its sweetness also balances acidic elements like citrus juices. Superfine sugar (also called bar sugar, a nod to its use by bartenders) is best for making simple syrup because the fine granules dissolve easily without heating. There are two methods of making simple syrup: hot and cold. Most people are familiar with the hot method and do not realize that you can get the same result by simply stirring or shaking it. The cold method works only with superfine sugar. Standard granulated sugar requires heat to thoroughly dissolve all the granules. Either way, the sugar and water proportions are the same—one to one by volume; because there is a lot of air trapped between granules of sugar, we recommend measuring by weight. For those who don't own a kitchen scale, we offer a volume measurement as well.

Making simple syrup is incredibly straightforward, requiring only two ingredients: sugar and water. The ratio is a perfect 1:1, making it easy to remember and even easier to execute. I prefer the cold method, particularly on a busy weeknight. The process involves gently adding water to sugar in a bottle, shaking and swirling until fully dissolved. It takes a little patience, but the end result is worth it. The convenience of the cold method allows me to quickly prepare this essential sweetener whenever I need it, without the fuss of heating a pan. It's a testament to the fact that sometimes, the simplest approach is the best.

But the beauty of simple syrup goes beyond its ease of preparation. Its subtle sweetness adds depth and complexity to countless cocktails. Think of its ability to enhance the tartness of a lemon drop martini or perfectly complement the smoky notes of a mezcal margarita. It’s a versatile ingredient that elevates my cocktail creations from ordinary to exceptional. What makes simple syrup even more appealing is its shelf life. Properly stored in the refrigerator, it maintains its quality and freshness for several days, ensuring I'm always prepared for an impromptu happy hour or a sophisticated evening gathering.

Simple syrup has also become an essential part of my baking repertoire. I add it to my morning coffee or use it to enhance the flavor of desserts. It’s a versatile sweetener that goes far beyond cocktails. Whether I'm crafting sophisticated cocktails or creating delightful desserts, simple syrup is always a reliable ingredient I can count on.

The versatility of simple syrup extends beyond just cocktails and baking. It can be incorporated into various recipes, enhancing the flavour and texture of dishes. For instance, I love adding a touch of simple syrup to my homemade salad dressings, creating a delightful balance of sweet and tangy flavours. The possibilities are truly endless, and the more I experiment, the more impressed I am with its subtle magic.

In essence, simple syrup is more than just a sweetener; it's a testament to the beauty of simplicity, a cornerstone of elegance in both my professional and personal life. It’s a simple solution to a complex world, one that enhances experiences without adding unnecessary complications. And that, in itself, is truly refreshing.

Step-by-step

    • Hot method: Combine the sugar and water in a large saucepan over medium heat. Bring to a boil, stirring continuously. Let the syrup cool, then store in a quart bottle.
    • Cold method: Using a funnel, pour the sugar into a quart bottle. Add the water in small increments, capping and shaking between additions to loosen the sugar and free the trapped air. Once all the water has been added, continue to rotate the bottle until all the sugar is dissolved. Store in the refrigerator. It will firm up when cold, so allow to return to room temperature before using. The syrup will keep for 4 days, refrigerated.
