My Go-To Weeknight Meal: Easy Boston Butt Barbecue

As a busy working mom, finding time to cook delicious and satisfying meals can be a challenge. Weeknights are often a whirlwind of school pick-ups, homework help, and the general chaos of family life. That's why I rely heavily on recipes that are simple, flavorful, and require minimal effort. This Easy Boston Butt Barbecue recipe has become a staple in our house, and I'm thrilled to share it with you.

The beauty of this recipe lies in its simplicity. It's a slow-cooker wonder, meaning minimal active cooking time. Throw everything in the slow cooker in the morning, and by dinner time, you have a tender, juicy, and flavorful pulled pork ready to go. The combination of the Boston Butt, Coca-Cola (yes, really!), and your favorite BBQ sauce creates a depth of flavor that's hard to resist. My husband and I have different preferences when it comes to serving this – he loves it piled high on a bun, making a delicious BBQ sandwich, while I prefer mine as a plate meal, maybe with some coleslaw on the side. Either way, it's a guaranteed crowd-pleaser.

This recipe is unbelievably versatile. The leftovers are amazing! We often enjoy it for lunch the next day, or I’ll use the pulled pork to make tacos, quesadillas, or even add it to a hearty salad. It’s a fantastic way to stretch a single meal into several delicious ones, saving both time and money. Honestly, the only downside is the temptation to eat the entire pot in one sitting! It’s that good.

Beyond the Weeknight: This recipe isn't just for busy weeknights. It’s fantastic for larger gatherings and parties too. The slow cooker nature means you can spend more time with your guests and less time hovering over a hot stove. Simply increase the quantities to feed a crowd, and you’ll have a show-stopping dish that everyone will love. The beauty of this recipe is its adaptability. You can adjust the amount of BBQ sauce to your preferred level of sweetness and spiciness, making it customizable to individual tastes. Feel free to experiment with different types of BBQ sauce to find your perfect match.

Tips and Tricks:

  • Choosing your Boston Butt: Look for a Boston Butt that has a good amount of marbling. This will ensure it stays moist and tender during the cooking process.
  • The Coca-Cola Secret: The Coca-Cola adds a surprising depth of flavor to the pork. Don’t skip this ingredient!
  • Don't Overcook: Overcooked pork can be dry, so check it regularly towards the end of the cooking time. Use a fork to test for tenderness; it should easily shred apart.
  • Get Creative with Leftovers: The possibilities are endless! Think tacos, nachos, salads, sandwiches, pizzas – the options are limited only by your imagination.

This Easy Boston Butt Barbecue recipe is more than just a meal; it’s a time-saver, a crowd-pleaser, and a testament to the magic of simple cooking. It's a recipe I return to again and again, and I know it will become a favorite in your kitchen too. Give it a try, and let me know what you think!

Serving Suggestions: Serve your Easy Boston Butt Barbecue on hamburger buns with coleslaw, on top of mashed potatoes and green beans, or in tacos with your favorite toppings.

Step-by-step

    • Place washed Boston Butt in crock pot.
    • Pour soda over meat until meat is covered.
    • Cook on high ~7 hours. Check meat after 6 hours or so. If you can stick a fork in it and shred part of the meat off, it is ready.
    • Take meat out of crock pot, allowing Coke to drain off, and place in a dish or on a platter. Bone and bottom layer of fat should fall off into the pot when removing meat. If not, it might not be cooked fully, or might just need some coaxing.
    • At this point, I usually pick out any big pieces of fat in the meat- I'm a picky eater. It should peel right off.
    • Use a fork to shred meat apart.
    • Squirt BBQ sauce over meat to taste.
    • Enjoy!!
