This is a great appetizer/dip to have on hand for any type of party. It is kind of like a bean and veggie salsa. We dip tortilla chips in it or you could use it as a garnish. We typically have this in the summer time, football parties, Christmas get-togethers, and of course New Years (it has black eyed peas in it....my Grandma told me it is good luck to eat black eyed peas on New Year's).
