A lean ground beef works best for this recipe, inspired by my friend and cookbook author Rebecca Lang. If small balls of fresh mozzarella are unavailable, sprinkle the layer with shredded mozzarella.

My Favorite Weeknight Meal: Stuffed Meatloaf

As a busy working mom, finding time to cook a delicious and healthy dinner can feel like a Herculean task. Between juggling work deadlines, school pick-ups, and all the other demands of daily life, the last thing I want is to spend hours in the kitchen. That's why I rely on quick, easy, and satisfying recipes that don't compromise on flavor. This Stuffed Meatloaf recipe has become a weeknight staple in my home, a true lifesaver on those days when time is of the essence.

The beauty of this recipe lies in its simplicity. It uses readily available ingredients, most of which I usually have on hand. The slow cooker does all the work, allowing me to focus on other tasks while dinner practically cooks itself. The result is a juicy, flavorful meatloaf that's bursting with cheesy goodness. My family loves it, and I love how stress-free it makes my weeknight dinners.

The secret to this meatloaf's success is the combination of lean ground beef, which keeps it healthy, and the gooey mozzarella cheese nestled in the center, which adds a delightful burst of flavor and texture. The tomato sauce adds a rich, tangy depth that complements the savory meat perfectly. It's a complete meal in one, satisfying even the pickiest eaters.

I often adapt this recipe to suit my family's preferences and what I have on hand. Sometimes I add finely chopped vegetables like carrots or zucchini to the meat mixture for an extra nutritional boost. If I'm feeling adventurous, I might experiment with different cheeses or add herbs and spices to create unique flavor profiles. The possibilities are endless!

Beyond the convenience and deliciousness, this recipe holds a special place in my heart because it reminds me of a cherished friendship. It's inspired by my friend Rebecca, a talented cookbook author who introduced me to the joy of slow-cooking and the art of creating comforting meals without sacrificing valuable time. This meatloaf is a testament to the power of simple recipes and the bonds of friendship.

This recipe is perfect for busy weeknights but also elegant enough for a casual weekend dinner. It's the kind of meal that brings people together, fostering a sense of warmth and connection around the dinner table. The aroma alone is enough to make everyone feel at home and ready to relax after a long day. I wholeheartedly recommend this Stuffed Meatloaf to anyone who is looking for a simple yet delicious recipe that satisfies both the taste buds and the time-constrained lifestyle of the modern family.

Tips and Variations:

  • For a spicier kick: Add a pinch of red pepper flakes or a dash of your favorite hot sauce to the meat mixture.
  • For a richer flavor: Use a combination of ground beef and ground pork.
  • Add vegetables: Incorporate finely chopped carrots, zucchini, or bell peppers into the meat mixture.
  • Experiment with cheese: Try different types of cheese, such as provolone, pepper jack, or even crumbled feta.
  • Make it a complete meal: Serve with a side of roasted vegetables, a fresh salad, or mashed potatoes.

This Stuffed Meatloaf is more than just a recipe; it's a symbol of comfort, connection, and the ability to create delicious meals even amidst the chaos of everyday life. Try it tonight, and I'm sure it will quickly become a new favorite in your home too. Enjoy!

Step-by-step

    • Coat the inside of a 3 1/2-quart slow cooker with cooking spray and prepare the aluminum foil sling.
    • Beat the egg in a medium bowl. Stir in the onion, breadcrumbs, ketchup, Worcestershire sauce, and salt and pepper to taste in a small bowl. Add ground beef and combine well. Form into two 5 x 3-inch ovals. Transfer one oval to the center of the prepared slow cooker. Place the 4 mozzarella balls evenly down the center of the meat. Move the second oval on top of the mozzarella and press around the edges to seal. Pour tomato sauce over meatloaf.
    • Cover and cook on High for 3 hours. The meatloaf is cooked when an instant-read thermometer inserted into the middle of the loaf registers 165 degrees.
    • Remove cover, turn off slow cooker, and allow meatloaf to rest 10 minutes. Gather the four strips of the sling toward the center and lift to remove the loaf to a serving platter. Slide meatloaf off the foil with a spatula or knife. Serve warm.
