Homemade Mayonnaise: A Busy Woman's Secret Weapon

Let me tell you a little secret: I'm a busy woman. Between my demanding job, managing a household, and trying to squeeze in some personal time, the last thing I want to do is spend hours in the kitchen. That's why I've learned to appreciate quick, easy recipes that don't compromise on taste. And nothing embodies that better than my go-to homemade mayonnaise recipe. I used to rely on store-bought mayonnaise, but after tasting my own fresh, creamy creation, I'll never go back.

The truth is, making mayonnaise from scratch is far easier than most people think. It's not some complicated culinary feat requiring specialized equipment; in fact, I often make it in the evenings when I have a few spare minutes. It's become my little self-care ritual, a moment of calm in the midst of the daily chaos. The process is incredibly satisfying – watching the emulsion magically come together is almost mesmerizing. And the best part? The result is a far superior mayonnaise than anything you can buy in a store. The flavour is fresher, richer, and more vibrant, truly elevating any dish it graces. I find that even the simplest sandwiches taste extraordinary with this homemade mayonnaise. My kids love it, and it always impresses guests. It's versatility is key too; its freshness allows me to easily experiment with flavour variations, adding herbs, spices, or even a touch of lemon.

Forget about those long supermarket queues and the unpredictable quality of pre-made mayonnaise. Homemade mayonnaise is a testament to the power of simple ingredients transformed into something extraordinary. It's not just a condiment; it's a flavour enhancer, a taste of home, and a quick victory in the battle against hectic schedules. So, I encourage you to embrace the simplicity and satisfaction of making your own mayonnaise. It's a small act of self-sufficiency that yields a surprisingly big reward. You'll be amazed by how much fresher, better and more flavorful it tastes compared to the store-bought ones.

Beyond the Sandwich: Unexpected Ways to Use Homemade Mayonnaise

While homemade mayonnaise is a classic sandwich spread, its culinary applications extend far beyond that. Consider these creative uses to elevate your dishes:

  • Salad Dressings: A base for a creamy, flavorful salad dressing. Add herbs, lemon juice, and a touch of Dijon mustard for a tangy kick.
  • Dips and Spreads: A base for delicious dips for vegetables or chips. Experiment with different herbs, spices, and even roasted garlic for unique flavour combinations.
  • Marinade for Chicken or Fish: A simple yet effective marinade to keep chicken or fish moist and flavorful during grilling or baking. The creamy texture helps to tenderize the meat.
  • Deviled Eggs: The ultimate classic—use homemade mayonnaise for a superior flavour in your deviled eggs.
  • Potato Salad: Creamy and delicious, enhancing the flavor of any potato salad.
  • Sauce for Sandwiches and Burgers: Add a touch of zest to any sandwich or burger by replacing store-bought mayonnaise with the homemade version.
  • Aioli: Transform your homemade mayonnaise into a flavourful aioli by adding roasted garlic, herbs, and a touch of lemon juice.

Tips for Making Perfect Homemade Mayonnaise:

  • Use Fresh, High-Quality Ingredients: The quality of your ingredients directly impacts the final product. Opt for fresh, high-quality eggs and oil.
  • Room Temperature Ingredients: Ensure your egg yolks and oil are at room temperature for optimal emulsification.
  • Gradual Addition of Oil: Add the oil very slowly, ensuring that each addition is fully incorporated before adding more.
  • Consistent Mixing: Maintain a consistent mixing speed to prevent separation.
  • One Direction Mixing: Mixing in one direction is crucial for achieving a stable emulsion.
  • Storage: Store your homemade mayonnaise in an airtight container in the refrigerator for up to a week.

Making your own mayonnaise might seem daunting at first, but trust me, it's a skill worth mastering. It's quick, incredibly rewarding, and allows you to control the quality and flavour of this indispensable ingredient. Once you experience the creamy, fresh deliciousness of homemade mayonnaise, you'll wonder why you ever bought store-bought again! So go ahead, give it a try – you won't regret it.

Step-by-step

    • Mix Egg Yolk with mustard for about 1 minute (you can use the mixer at medium speed or you can also do it by hand).
    • Little by little you add about 1 tbs of oil and mix.
    • When you see the oil disappear, add a little bit more.
    • The egg will start to be thicker and thicker.
    • VERY IMPORTANT: Use the mixer in 1 direction only. Do NOT change the direction of mixing.
    • If you want a larger quantity, just add more egg yolks (at the beginning) and increase the quantity of ingredients.
