Red Hasselback Potatoes

Red Hasselback Potatoes
Kosher Status: Pareve. I created these potatoes. God created the potatoes, and Hasselback potato recipes probably go back to ancient Bolivia or something. I call them accordion potatoes because they remind me of that instrument that, by the way, is only played today at Bar/Bat Mitzvahs. They really should serve these potatoes at Bar Mitzvahs, too. It's such an elegant way to present a common potato. I make them with sliced garlic stuffed into each and every crevice, and then I top them with more garlic. Those who prefer less garlic can simply sprinkle it on top.

My Favorite Garlic-Loaded Hasselback Potatoes

As a busy working mom, I’m always on the lookout for delicious and easy recipes that the whole family will enjoy. These Hasselback potatoes have become a weeknight staple in our home, and for good reason. They’re incredibly flavorful, visually appealing, and surprisingly simple to make. The name "Hasselback" might sound fancy, but the technique is surprisingly straightforward. The thin slices create a beautiful, accordion-like effect, allowing the potatoes to crisp up perfectly while remaining tender inside. And the generous amount of garlic? Well, let's just say it's a family favorite.

I discovered this recipe a few years ago, and it's been a constant source of compliments. Guests always ask for the recipe, and my kids practically inhale them. The key is to use good quality potatoes – I prefer red-skinned potatoes for their beautiful color and slightly earthy flavor. And don't skimp on the garlic! The more, the merrier, in my opinion. The garlic infuses into the potato slices as they bake, creating a truly irresistible flavor combination. You can adjust the amount of garlic to your preference, of course – but I highly recommend going heavy on it. For those who aren't as big on garlic, a simple sprinkle on top will still deliver great flavor.

Beyond the delicious taste, these Hasselback potatoes are also incredibly versatile. They’re perfect as a side dish for any meal – from roasted chicken to grilled steak to simple fish. They also make a fantastic addition to a holiday spread, instantly elevating the meal to a special occasion. And the best part? They require minimal preparation. Once the potatoes are sliced, all you have to do is drizzle them with olive oil, sprinkle with salt, pepper, and garlic, and pop them in the oven. The rest is pure magic. The potatoes become beautifully browned and crispy on the outside, and incredibly soft and fluffy on the inside. It's a textural masterpiece! And let's not forget the presentation - the elegant, accordion-like appearance makes them a visually stunning addition to any table.

So, if you're looking for a delicious, easy, and impressive side dish that your whole family will love, give these Hasselback potatoes a try. They're guaranteed to become a new family favorite. You can even get the kids involved in the slicing process – it's a fun and engaging activity that makes meal preparation more enjoyable. And believe me, the delicious aroma that fills your kitchen as they bake will be worth it.

Beyond the Dinner Table: These Hasselback potatoes aren’t just limited to dinner. They're equally delicious for a casual brunch, a picnic, or even a potluck gathering. Their impressive appearance makes them a perfect conversation starter. You can also experiment with different herbs and spices to create your own unique variations. Rosemary, thyme, or even a sprinkle of paprika would complement the potatoes beautifully. The possibilities are endless!

I hope you enjoy these amazing Hasselback potatoes as much as my family does! Happy cooking!

Step-by-step

    • Preheat the oven to 375°F. Spray a baking sheet with cooking spray.
    • Place each potato in a large wooden spoon. Thinly slice the potato vertically, about every 1/8 inch, being careful not to slice all the way through to the bottom. The shape of the spoon should help prevent it.
    • Place the potatoes on the prepared baking sheet. Sprinkle the garlic evenly over all the potatoes, and use your fingers to push it into the slits. Drizzle with the olive oil and sprinkle with the salt and pepper. Bake until tender and browned, 60 to 70 minutes.
