Four Corners Lentil Soup
My favorite recipe that I've ever posted on the blog is my Four Corners lentil soup, and it remains the most frequently cooked dish in my kitchen. It is so fast and simple to make, really inexpensive, and uses ingredients that are all found in the pantry. It freezes well, too, so I often make a double batch and store some away for when I need a wholesome meal in a hurry. And why the name Four Corners? Besides being my favorite soup, it is also much loved by many people I know all around the world. From the busy streets of Singapore to the remote wilderness of northern Ontario, from the scorched deserts in the American Southwest to the rainy shores of Denmark, this soup really has traveled the four corners of the Earth! Highly nutritious and packed with flavor, this lentil soup is a crowd-pleaser that will warm the heart of anyone you serve it to.

My Go-To Comfort Food: Four Corners Lentil Soup

As a busy working mom, finding time to cook healthy and delicious meals can feel like a Herculean task. But there's one recipe that's become my absolute lifesaver: Four Corners Lentil Soup. It’s incredibly versatile, easy to make, and tastes amazing. The best part? It's so adaptable; I can whip it up on a weeknight after a long day at the office or prep a big batch on the weekend for easy, healthy lunches throughout the week. The flavor is rich and satisfying, perfect for those chilly evenings when all I want is something warm and comforting.

What sets this soup apart is its simplicity. The ingredient list is short, and most items are pantry staples. I usually have lentils, canned tomatoes, and vegetable broth on hand, making it a truly spontaneous meal. This soup is also incredibly forgiving – if I don’t have fresh cilantro, parsley works just as well. Or if I’m out of cayenne pepper, I can easily skip it without losing much of the overall deliciousness. The beauty of this recipe lies in its adaptability to whatever I have available.

Beyond its practicality, the soup itself is simply delicious. The lentils cook to a perfect tenderness, absorbing the flavors of the aromatic spices and creating a hearty, deeply satisfying broth. The slight tang of lemon adds a refreshing contrast to the earthiness of the lentils and spices, while a touch of maple syrup adds a subtle sweetness that rounds out the flavors beautifully. It’s the kind of soup that warms you from the inside out – perfect for a cold winter’s day or a cozy night in.

I often make a double batch and freeze half. Having a ready-made, healthy meal tucked away in the freezer is an absolute lifesaver on those particularly busy weeks. I can grab a container, pop it in the microwave, and have a nutritious and delicious meal in minutes – no meal prep or frantic grocery runs required.

Beyond the practicality and ease, this soup holds a special place in my heart. The name “Four Corners” reflects its global appeal. I’ve shared this recipe with friends and family from all over the world, and it’s consistently a hit, regardless of cultural background or culinary preferences. It’s a testament to the simple, universal appeal of good food – warm, hearty, and satisfying.

Whether you’re a seasoned chef or a complete beginner in the kitchen, this Four Corners Lentil Soup is a recipe you absolutely must try. It's more than just a meal; it's a comforting ritual, a versatile solution for busy days, and a delicious way to bring a touch of warmth and flavor to your life. Step-by-step

    • Heat the oil in a medium pot, add the onions, garlic, and ginger, and sauté for 5 minutes, until soft. Add a pinch of salt, the cumin, and the cayenne, and stir for another minute or so, until fragrant.
    • Add the tomatoes, 3 slices of lemon, and the lentils. Then add the vegetable broth and stir well. Cover the pot and bring the mixture to a boil. Reduce the heat and simmer for about 30 minutes, until the lentils are soft. Add a squirt of maple syrup to balance the flavor, if desired.
    • Serve hot, garnished with the cilantro, spring onions, or parsley, and topped with a slice of lemon.
