This tequila-infused carnitas recipe is perfect for festive occasions or any weeknight you want to party. It's also a great way to feed a crowd and is super simple to scale up. I like to set out a spread of toppings, including queso fresco, chopped avocado, and sour cream, but you can choose any toppings you prefer. Also, if you are avoiding alcohol, feel free to swap out the tequila for additional broth.

My Go-To Crowd-Pleaser: Instant Pot Tequila Lime Carnitas

As a busy working mom, finding time to cook delicious and impressive meals can feel like a Herculean task. Weeknights are a whirlwind of school pick-ups, homework battles, and the ever-present to-do list. Weekends, while offering a bit more breathing room, often see me scrambling to get ahead or just trying to catch my breath. That’s why I’ve become a huge fan of recipes that are both quick and impressive. Enter my absolute favorite: Instant Pot Tequila Lime Carnitas.

This recipe is a lifesaver! It's incredibly versatile, easily scaled to feed a crowd (which is essential for our family gatherings), and requires minimal hands-on time. The Instant Pot does most of the heavy lifting, leaving me free to tackle other tasks. The result? Tender, flavorful carnitas that are always a hit. I've served these at everything from casual weeknight dinners to more elaborate celebrations, and they never disappoint. The vibrant citrus notes of the lime perfectly complement the subtle spiciness and rich flavor of the pork. The tequila adds a touch of sophistication (and a little fun!), but you can easily substitute it with more broth if you prefer.

One of my favorite aspects is how customizable this recipe is. I love setting out a colorful array of toppings for everyone to build their own perfect carnitas bowl. Think creamy queso fresco, vibrant avocado slices, dollops of tangy sour cream, and even a splash of hot sauce for those who like a little kick. The possibilities are endless! I often use butter lettuce cups as a healthy and refreshing base. This keeps things light and allows the carnitas to really shine.

The beauty of this recipe extends beyond its ease and flavor. The leftovers are just as delicious, if not more so, the next day! This makes it an excellent choice for meal prepping. I often make a double batch on the weekend, ensuring I have quick and easy lunches for the week. Just imagine, grabbing a pre-made carnitas bowl, ready to go – talk about a game changer for a busy schedule!

Beyond the practical benefits, making this dish fills me with a sense of accomplishment. Knowing I’ve created a flavorful and impressive meal from scratch, without spending hours in the kitchen, is incredibly satisfying. It allows me to connect with my family through a shared meal, without sacrificing my sanity or my precious time. So, if you’re looking for a delicious, crowd-pleasing recipe that’s as easy as it is impressive, look no further. Give this Instant Pot Tequila Lime Carnitas a try, and prepare to be amazed!

Tips and Variations:

  • Spice it up: Add a pinch of cayenne pepper or some chopped jalapeños for extra heat.
  • Get creative with toppings: Experiment with different salsas, pickled onions, or shredded cabbage.
  • Make it a taco night: Serve the carnitas in warm tortillas with your favorite taco fixings.
  • Slow cooker alternative: This recipe can also be easily adapted for a slow cooker. Simply sear the pork, then transfer it to the slow cooker with the remaining ingredients. Cook on low for 6-8 hours or high for 3-4 hours.
  • Meal prep magic: Make a large batch on the weekend and enjoy delicious leftovers throughout the week.

I hope you love this recipe as much as I do! Let me know in the comments if you have any questions or give it a try and share your experience.

Step-by-step

    • Rub the pork pieces evenly with the chile-lime seasoning.
    • Place the pork in the Instant Pot. Add the broth, tequila, and 2 tablespoons of the lime juice.
    • Secure the lid on the pot and close the pressure-release valve.
    • Set the pot to HIGH pressure for 60 minutes.
    • At the end of the cooking time, use a natural release to depressurize.
    • Using a slotted spoon, transfer the pork from the pot to a bowl.
    • Use two forks to shred it into large bite-size pieces.
    • Pour the cooking juices out of the pot into a separate bowl.
    • Wipe out the pot.
    • Select SAUTÉ and when the pot is hot, add 1 tablespoon of the avocado oil.
    • Add about half of the pork to the hot oil and cook, stirring occasionally, until the pork is browned and slightly crisp in some places, about 15 minutes.
    • Remove the pork from the pot. Repeat with the remaining pork and 1 tablespoon avocado oil.
    • Return all the pork to the pot and season to taste with salt.
    • Select CANCEL.
    • Stir the cilantro, lime zest, and remaining 2 tablespoons lime juice into the pork.
    • Skim the fat from the reserved cooking juices and add the cooking juices as desired to moisten the carnitas.
    • Serve the carnitas with butter lettuce leaves and desired toppings.
