Grilled Chicken with Lemon and Thyme: A Weeknight Winner

As a busy working mom, finding time to cook a delicious and healthy dinner can feel like a Herculean task. Weeknights are a whirlwind of school pick-ups, homework battles, and the never-ending cycle of laundry. But even amidst the chaos, I refuse to let dinner be an afterthought. It's the centerpiece of our family time, the moment when we all gather around the table and reconnect after a long day. That's why I've become a champion of quick, flavorful recipes that don't compromise on taste or nutrition. This grilled chicken with lemon and thyme is one of those lifesavers.

The beauty of this dish lies in its simplicity and flexibility. The prep time is minimal, allowing me to focus on other pressing matters while the chicken marinates (or doesn’t – the recipe works perfectly even without a long marinating time!). The grilling process is straightforward, even for a novice like me. And the result? Juicy, flavorful chicken with a delightful crispy skin, perfectly complemented by the bright, zesty lemon and fragrant thyme. It’s a dish that pleases everyone, from my picky eaters to my adventurous husband. It's also surprisingly versatile – easily adapted to suit different preferences. Sometimes I add a sprinkle of red pepper flakes for a touch of heat, or swap the olives for sun-dried tomatoes for a Mediterranean twist.

Beyond the Dinner Table: This recipe isn't confined to weeknight dinners. I’ve taken it with me on camping trips, grilling the chicken over an open fire, under the starry sky. The aroma alone is enough to create a magical, memorable meal. I've also prepared it for potlucks and summer barbecues, always receiving rave reviews. The make-ahead nature is a game-changer for those occasions, allowing me to enjoy the party instead of being stuck in the kitchen. It's even great for meal prepping – a perfect lunch option for busy workdays.

The Magic of Make-Ahead: The "make-ahead" aspect is truly a blessing. I often prepare the chicken and marinade the night before, letting the flavors meld overnight. This makes the grilling process even faster on the day, shaving off precious minutes from my already tight schedule. Knowing I have a delicious, healthy dinner ready without hours of prep work is an incredible stress reliever. The ease of this recipe allows me to relax and actually enjoy the process of cooking, rather than dreading it. It’s a small act of self-care amidst the chaos of motherhood.

More Than Just a Meal: For me, this grilled chicken isn’t just about nourishment; it's about creating memories, fostering connection, and savoring simple pleasures in a busy life. It’s about finding joy in the everyday ritual of cooking and sharing a meal with loved ones. It's a testament to the fact that even on the busiest of days, you can still create something delicious and meaningful.

This simple recipe has become a staple in my household, a reliable solution for satisfying hunger and bringing family together. The combination of flavors is so delightful, and the ease of preparation makes it a winner in my book. Try it out, and I’m confident it’ll become a favorite in yours too!

Step-by-step

    • Prepare a grill for 2-zone heat (for a gas grill, set one burner to medium-high and one or two burners to low; for a charcoal grill, bank most of the coals on one side). Lightly oil grate.
    • Pat chicken breasts dry; season generously all over with salt and pepper. Place on a rimmed baking sheet; let sit at room temperature at least 30 minutes and up to 1 hour.
    • Thinly slice 1 lemon crosswise into rounds; pluck out seeds. Place half of lemon slices in a small bowl. Add garlic and 1 Tbsp. oil and toss to coat; season with salt and pepper. Set remaining lemon slices aside for serving. Slice remaining lemon in half and squeeze juice into another small bowl (you should have about 1/4 cup). Set aside.
    • Pat chicken dry again (the salt will have drawn out more moisture) and rub with 2 Tbsp. oil.
    • Grill oiled lemon slices over hot side of grill, turning once, until charred in spots, about 3 minutes. Transfer to a plate.
    • Grill chicken on cooler side of grill, skin side down, until skin is browned and starting to crisp, 15–20 minutes.
    • Turn chicken over, cover, and continue to grill until an instant-read thermometer inserted into the thickest part of breasts registers 160°F, 8–10 minutes longer.
    • If desired, uncover grill, move chicken over to hotter side, and lightly char a minute or two.
    • Transfer to a cutting board and let rest 10–15 minutes.
    • Pull chicken meat from bones and slice 1/2" thick. Place on a rimmed platter, shingling slices.
    • Scatter thyme sprigs, olives, grilled lemon slices, and reserved fresh lemon slices over. Season with more salt and pepper; drizzle reserved lemon juice and remaining 1/2 cup oil over.
    • Let sit at least 15 minutes and up to 1 hour before serving.
