A Weeknight Winner: Proper Blokes' Sausage Fusilli

Life as a working mom is a whirlwind. Between early morning school runs, demanding meetings, and the endless cycle of laundry and meal prep, finding time for anything beyond survival feels like a luxury. But even in the midst of the chaos, I crave moments of simple pleasure, moments where the aroma of delicious food fills the house and brings a sense of calm amidst the storm. This Proper Blokes' Sausage Fusilli recipe is one of those moments. It's quick, it's easy, and it's incredibly satisfying, the perfect antidote to a long day.

The beauty of this dish lies in its simplicity. Forget complicated techniques and obscure ingredients. This recipe is all about letting the natural flavors of fresh, quality ingredients shine. The slightly spicy kick from the chillies, the fragrant warmth of oregano, and the bright acidity of lemon zest create a symphony of flavors that dance on your palate. And the sausage? Oh, the sausage! Using good quality sausage is key. I find a coarse Italian sausage works best, imparting a rich depth of flavor that elevates the entire dish. The fennel seeds add an earthy complexity, complementing the sausage beautifully. The process is incredibly straightforward; simply browning the sausage, adding the aromatic spices, and then tossing it all together with perfectly cooked fusilli. It's a recipe that requires minimal effort but yields maximum satisfaction.

I often find myself adapting this recipe to suit whatever fresh produce I have on hand. Sometimes I'll add a handful of cherry tomatoes in the final stages of cooking, allowing them to burst and release their sweet juices into the sauce. Other times, I might throw in some wilted spinach or kale for an extra boost of nutrients. The possibilities are endless! The key is to embrace the flexibility of the recipe and let your creativity guide you. And of course, don't forget the generous grating of Parmesan cheese at the end. It's the perfect finishing touch, adding a salty, sharp note that balances the richness of the sausage and pasta. This recipe is a testament to the power of simple, delicious food. It’s a reminder that even amidst the whirlwind of life, there's always time for a comforting, flavorful meal that nourishes both body and soul. Beyond the Recipe: This dish transcends the simple act of cooking. It's a ritual, a moment of connection, a chance to slow down and appreciate the simple joys of life. I often find myself preparing this dish with my children, involving them in the process of crushing the fennel seeds or tossing the pasta. It's a way to share not just a meal, but a shared experience, creating memories that will last a lifetime. The process of preparing this dish is as enjoyable as the act of eating it; the aromas fill the kitchen, creating a comforting ambiance that welcomes family and friends. Step-by-step

    • Bash up the fennel seeds and chillies in a pestle and mortar or Flavor Shaker until coarsely crushed, then put to one side.
    • Heat a splash of olive oil in a heavy-bottomed frying pan.
    • Squeeze the meat out of the sausage skins and put into the pan, really breaking it up using the back of a spoon.
    • Fry for a few minutes until the meat starts to color and the fat has rendered slightly, then crush it once more so it resembles coarse mince.
    • Add the bashed-up fennel seeds and chillies and cook on a medium heat for around 10 minutes until the meat becomes crisp, golden brown and slightly caramelized.
    • Stir in your oregano, then pour in the white wine and allow it to reduce by half.
    • Add the lemon zest and juice.
    • Turn the heat down to low while you cook your pasta in a large pan of salted boiling water according to the package instructions.
    • When the pasta has cooked al dente, drain it in a colander, reserving some of the cooking water, and toss it in the pan with your sausagemeat.
    • Coat the pasta in all the lovely flavors then add the butter, Parmesan, chopped parsley and a few spoonfuls of the reserved cooking water. This will give you a lovely loose, shiny sauce.
    • Taste and check for seasoning, then serve immediately with a little extra grated Parmesan sprinkled over the top.
