We make half of this mac and cheese plain, for kids, and into the other half we stir some chipotle chiles to give it a grown-up kick. Any tubular pasta will do, but we like to use cavatappi, a ridged, spiral macaroni that lends the dish a particularly festive air.

My Family's Favorite Mac and Cheese: A Recipe for Two (or More!)

As a busy mom, finding time to cook a delicious and satisfying meal for my family can feel like a Herculean task. Weeknights are often a whirlwind of homework, after-school activities, and the general chaos of family life. But one thing I always strive for is a home-cooked meal, a comforting tradition that brings us all together around the table. That’s why this recipe for macaroni and cheese with a twist has become a staple in our home.

I love macaroni and cheese. Who doesn’t? It's the quintessential comfort food, creamy, cheesy, and utterly satisfying. But sometimes, I crave a little more than just plain old mac and cheese. That's where the chipotle peppers come in. This recipe is a delightful compromise – a simple, kid-friendly classic with a surprising kick for the grown-ups. The secret? We make half the mac and cheese plain, satisfying my picky eaters, and stir some delicious chipotle peppers into the other half, adding a smoky, spicy depth that makes it a truly special dish.

The beauty of this recipe lies in its simplicity and adaptability. I often adjust the level of spice based on my family's preferences. Sometimes, I even add different kinds of cheese for a more complex flavor profile. This recipe is a blank canvas – feel free to get creative!

The magic of cavatappi

The shape of the pasta makes a difference. While any tubular pasta works perfectly, I’ve always loved using cavatappi. The ridges catch the creamy cheese sauce beautifully, creating a satisfying texture that elevates the dish beyond just a simple pasta and cheese combination. It's that little touch of elegance that makes this dish more of an occasion than just another meal.

Breadcrumbs that make all the difference

The garlic bread crumbs add a wonderful textural contrast and a delicate savory note. They’re easy to make, and they elevate the mac and cheese to a whole new level. It’s the perfect topping – crunchy, slightly garlicky, and wonderfully aromatic.

More than just a meal

This isn't just a recipe; it's a memory maker. The aroma that fills the kitchen as it bakes is a comfort in itself. The happy chatter around the table, everyone relishing every bite – these are the moments I cherish most. It’s a reminder that even in the busiest of lives, we can find time for simple pleasures, simple recipes, and create lasting family memories. It's food that nourishes not just the body but also the soul.

Beyond the Recipe: Adaptability and Creativity

This recipe is a starting point; let your culinary imagination run wild! Experiment with different cheeses, like Gruyère or Fontina, to add depth and complexity. If you don't have chipotle peppers, try adding a pinch of smoked paprika or a dash of your favorite hot sauce for a similar smoky flavor. Feel free to incorporate vegetables, such as roasted broccoli or caramelized onions, to add another dimension to the dish.

The key to a successful macaroni and cheese, whether plain or spicy, is all about the cheese sauce. Take your time, whisk diligently, and taste as you go. The reward is a wonderfully smooth and decadent sauce that will coat every strand of pasta perfectly. The secret is to use high-quality ingredients; they make all the difference.

Tips for Success:

  • Use freshly grated cheese for the best flavor and texture.
  • Don't overcook the macaroni; it should be al dente.
  • Make sure the cheese sauce is smooth and creamy before adding it to the pasta.
  • If you're making the macaroni and cheese ahead of time, let it cool completely before refrigerating.
  • Baking time may vary depending on your oven; keep an eye on it and adjust accordingly.
  • This macaroni and cheese is more than just a recipe; it's a testament to the power of simple ingredients, combined with love and a dash of creativity, to create something truly special.

    Step-by-step

      • Make bread crumbs: Heat butter and oil in a 10-inch heavy skillet over moderate heat until foam subsides, then cook garlic and bread crumbs, stirring, until crumbs are golden. Transfer to paper towels to drain and season with salt.
      • Make macaroni: Preheat oven to 350°F. Chop chipotles. Melt butter in a 3- to 4-quart saucepan over moderate heat, then add flour and cook, whisking, 1 minute. Gradually whisk in milk, cream, and mustard and simmer, whisking occasionally, 3 minutes.
      • Cook macaroni in a 6- to 7-quart pot of boiling salted water until just tender. Drain in a colander and transfer to a large bowl. Stir in white sauce, cheese, and salt to taste.
      • Fill a 1 1/2-quart shallow casserole with half of macaroni mixture. Stir chipotles into remaining macaroni. Spoon into another 1 1/2-quart shallow casserole and sprinkle both with bread crumbs.
      • Bake casseroles in middle of oven 30 minutes, or until bubbly.
      • Cook's note: Macaroni and cheese may be made 2 days ahead, put into casseroles, cooled completely, and chilled, covered. Do not add bread crumbs until ready to bake. (Baking may take longer than 30 minutes.)
