My Famous Downunder Potato Bake

My Downunder Potato Bake: A Family Favorite

This recipe isn't just a potato bake; it's a story. A story of cozy evenings, family gatherings, and the comforting aroma of creamy potatoes and crispy bacon filling our home. I've been perfecting this recipe for years, tweaking it here and there to achieve that perfect balance of flavors and textures. The secret? Coating the potatoes in a mixture of cream and garlic before layering. This simple step ensures the potatoes cook evenly, resulting in a deliciously tender interior and a beautifully golden-brown crust. It's also a trick that keeps the bake from becoming overly greasy, a concern I had with earlier iterations of the recipe. The result is a dish that’s both hearty and satisfying, a real crowd-pleaser for any occasion.

My family absolutely adores this dish. It’s a regular feature on our weekend dinner menu, and it’s always the first dish to disappear at potlucks and gatherings. The kids particularly love the combination of creamy potatoes, salty bacon, and tangy cheese. It’s the kind of food that evokes feelings of warmth and togetherness. The addition of ham adds another layer of flavor, creating a complex taste profile that everyone enjoys. And yes, the optional koala… well, let's just say it adds a bit of fun and whimsy to an already delightful dish. It's certainly a conversation starter! Though finding a suitable koala may take a little bit of adventurous shopping.

Beyond the family table, this potato bake has traveled with me on many adventures. I’ve whipped it up in cramped camper kitchens, in friends' kitchens across the country, and even once in a surprisingly well-equipped Airbnb in the middle of nowhere. It's incredibly adaptable and forgiving. You don’t need fancy ingredients or precise measurements; a little improvisation is always welcome. The beauty of this recipe lies in its simplicity and its ability to bring people together, regardless of where you are or who you’re with. It’s a testament to the power of good food to create lasting memories.

This potato bake is more than just a recipe; it's a symbol of home, comfort, and connection. It's a dish I've shared with loved ones, and one I’m excited to continue sharing for years to come. It’s easy to make, adaptable to different tastes, and guaranteed to be a hit with everyone who tries it. So gather your ingredients, preheat your oven, and prepare for a truly unforgettable culinary experience. The aroma alone will transport you to a place of warmth and happiness. Give it a try, and I’m confident it’ll become a staple in your kitchen, too.

Ingredient Notes: Feel free to experiment with different types of cheese. Cheddar is a classic choice, but you can also use Gruyère, Monterey Jack, or even a blend of cheeses. For the ham, I prefer a good quality deli ham, but you could also use cooked ham or even prosciutto for a more sophisticated twist. And as for the optional koala… well, that’s entirely up to you! (Let's be honest, finding a koala is going to be an adventure in itself!)

Serving Suggestions: This potato bake is delicious on its own, but it also pairs beautifully with a simple green salad or some steamed vegetables. A crusty loaf of bread is also a great accompaniment for soaking up all that delicious creamy sauce. For a special occasion, you could even serve it with a side of roasted asparagus or grilled chicken.

Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply place slices in the microwave or oven until heated through.

Step-by-step

    • Place most of the cream and garlic into a mixing bowl
    • Slice potatoes and place them into the mixing bowl to coat them in the cream and garlic
    • Use a Pyrex (glass), round or rectangle baking dish, place 1 layer of potatoes in baking dish, than add a little of the bacon and ham on top of the first layer, place another layer of potatoes on top of the first, with the bacon and ham and repeat this process.
    • Pour the rest of the cream over the potatoes, than spread the cheese over the top
    • Place the koala over the cheese, koala may be hard to get, (the little buggers are fiesty).
    • Bake for 40 mins @ 200 degrees.
