Step-by-step

    • Chop up all your veggies first. Use whatever veggies you like.
    • Put the lentils, carrots, potatoes, bay leaves, thyme, cinnamon, and nutmeg in a pot with 8 cups of stock. Bring to a boil, then reduce heat to low, stirring occasionally.
    • Put olive oil in a skillet and toss in onions and garlic, cooking on medium-low for about 5 minutes until onions are soft. Set aside.
    • Sauté chopped chicken sausage in the same pan, if using.
    • After 30-40 minutes of cooking the stock/lentil/veggie mixture, remove bay leaves and add onions and garlic. Taste and add more seasonings as desired.
    • If you want a soupier consistency, add more stock. Add onion & garlic mixture, then spinach near the end of cooking. Add sautéed sausage at the very end.
    • Serve with salt and pepper to taste.
