Terms like large and jumbo can vary among fishmongers. In this recipe, we used what are known universally as U 16/20s (16 to 20 of them make a pound). We asked our fishmonger to shell and devein the shrimp for us. It cost a little more but saved lots of time. The dried Aleppo chile flakes we call for have an earthy, robust flavor with more richness than heat.

A Busy Mom's Secret to Effortless Elegance: Spicy Lemon-Marinated Shrimp

Life as a working mom is a whirlwind. Between school runs, work deadlines, and the never-ending to-do list, finding time for elaborate cooking feels like a luxury I can't afford. But let me tell you, even amidst the chaos, I refuse to compromise on delicious, healthy meals. That's where this Spicy Lemon-Marinated Shrimp recipe comes in – a lifesaver for busy weeknights and a crowd-pleaser for special occasions.

The beauty of this recipe lies in its simplicity and versatility. The marinade, bursting with zesty lemon, fragrant coriander, and a subtle kick of Aleppo chiles, does all the heavy lifting. The prep work is minimal, and the best part? You can marinate the shrimp ahead of time, making it a perfect make-ahead dish for those nights when even thinking about cooking feels overwhelming. I often prep the marinade on Sunday, toss in the shrimp, and pop it in the fridge. By the time dinner rolls around on a busy Tuesday, all I need to do is drain and serve. It’s truly a game-changer.

Beyond the Busy Weeknight: Don't let the "easy" tag fool you – this dish is surprisingly sophisticated. The bright, citrusy flavors are perfectly balanced by the warm spice of the Aleppo chiles, creating a flavor profile that's both vibrant and comforting. I've served it at casual gatherings with friends, elegant dinner parties, and even packed it for picnics. The shrimp remains juicy and flavorful, even after being marinated for a while. The marinade is so versatile; I've used it on other proteins, such as fish or chicken, with delightful results. I love how adaptable this recipe is!

A Touch of Luxury, Without the Fuss: One of my favorite things about this recipe is how it feels luxurious without demanding hours in the kitchen. The vibrant color of the shrimp, glistening from the marinade, makes it an instant showstopper on any plate. It's the kind of dish that impresses guests without requiring a chef's expertise. Plus, the cleanup is minimal – a huge bonus for a busy mom!

Serving Suggestions: I love serving this shrimp with a simple side of quinoa or couscous, or even over a bed of fresh greens. The vibrant colors and flavors complement each other beautifully. Sometimes I’ll grill some vegetables and serve them alongside the shrimp. It truly enhances the whole dish.

Variations: Feel free to experiment with different types of chili flakes to adjust the level of heat to your liking. For those who prefer a milder flavor, you can skip the chili flakes altogether. I've even used different types of vinegars such as apple cider vinegar. I often adjust the recipe based on my family's preferences.

More Than Just a Meal: This Spicy Lemon-Marinated Shrimp recipe is more than just a quick and easy dinner solution; it’s a reminder that even in the midst of a busy life, we can still enjoy delicious, healthy, and impressive meals without sacrificing our precious time. It’s a celebration of simple ingredients, clever preparation, and a little bit of flavorful magic.

This recipe has become a staple in my household, a testament to the fact that effortless elegance is absolutely achievable, even for the busiest of moms. So, give it a try, and let me know what you think. I'm sure it will quickly become a go-to meal in your home too!

Step-by-step

    • Remove zest from lemons with a vegetable peeler and remove any white pith from zest strips with a sharp knife.
    • Squeeze 1 1/2 cups lemon juice.
    • Finely grind coriander seeds in an electric coffee/spice grinder.
    • Whisk together zest, juice, coriander, vinegar, oil, water, sugar, chile flakes, and 6 tablespoons kosher salt in a large bowl until sugar and salt are dissolved.
    • Bring an 8-qt. pot of water to a boil with pickling spices and remaining 2 tablespoons salt and cook shrimp, 2 lb. at a time, 1 1/2 minutes, or until just cooked through. Return water to a boil between batches.
    • Transfer cooked shrimp with a slotted spoon to a colander to drain and add warm shrimp to marinade, tossing to coat.
    • Cool shrimp slightly and divide among about 8 large sealable plastic bags with marinade. Stack bags in a large roasting pan, keeping shrimp in single layers.
    • Marinate, chilled, turning bags occasionally, at least 8 hours.
    • Drain shrimp before serving.
